The helmet you talked about at 50 seconds belonged to a Regiment called the Bersaglieri (phonetic speech Bur sa lie ari, Note, silent g) The feathers were black and the unit still exists today. It has a high esprit de corps and is very good.
You are going to find you need to pair more soldiers with your automatic weapons. Medium machine guns need two assistants, usually feeding the ammo into the gun. Light machine guns like the Breda need one assistants. The Carabinieri, did have the Bicorne hats wore them as ceremonial dress. They wore standard combat gear like metal helmets in battle.
I'll just have to bend the rules a bit. From what I read, the Carabinieri wore their hats a lot, even using a cover over them to camouflage them. It wouldn't surprise me seen as some of their colonial troops wore fez and they had some other troops that wore night caps. However, I will take your word for it
So you have put them together as Bersaglieri, elite mounted infantry. If you are looking for iconic Italian armour then a Cv33 or CV35 Tankette would fit the bill. Not great in combat unless you field the Lanciaflamme flamethrower version but very, very Italian.

If you want something mobile for the Italians, buy them an Autoblindo. It was a cool looking armoured car, 20mm auto cannon or an A/T gun plus machine guns and could do 78klm ph on the road. It is something ironically Italian and was not that bad. As for the true strength of the Italians, get them an artillery piece. Italian guns were the bane of the allied soldiers during the desert campaigns. There was an apocryphal story of an Aussie who jumped into a trench followed by two Germans and they commenced punching seven shades of sh1t out of each other. This was interrupted by an intense artillery barrage which had all three looking for the deepest part of the trench. When it finished, one of the Germans looked at the Aussie and said, F'ing Italians, to which the Aussie agreed and they went their separate ways. Tobruk perimeter I believe.
