Delicious. I normally make my Thai curry with shop bought paste, but had a go at the home made stuff yesterday. Yum ! Still made it as a king prawn curry though with spring onions and green beans, but will try the chicken and aubergine version next time.
Oil separation is exactly what you want in this, that's the coconut oil. A lot of the coconut milk you find in stores is homogenized and hard to separate, but traditionally one method is to fry the coconut milk first until the oil separates a bit
A great example of a highly informative video in just over 60 seconds!

Made this and it was great, but I got a lot of oil on top that leeched out. Did I do something wrong?

What did you put on top?
Shallots (dried onion)
Original Thai Green Curry you never put oil in! The oil will come from the coconut milk!!
Who cares of its authentic or not!
I think if the coconut milk isn’t fresh the oil doesn’t seperate from it
@@lovebunnykazi do
@@lovebunnykazJamie Oliver, is that you?
Do you put the chicken in raw?

Why basil why like why ginger haiya!
I was born and raised in Thai.
I am sure it’s galangal not ginger!
