      It's probably because you're both have Asian descent and similar foods it's amazing that even different countries can be so different but have very similar ways in preparing their food so Mexico and India it doesn't surprise me that you like each other's foods they're very similar

      @@RE-bg9ds There was a really interesting documentary that explored (among other things) the influence of Indian/Pakistani food on the food of the southern United States. For instance chow-chow relish was compared to a chutney, which makes sense to me. I would not be at all surprised if some of the very oldest food traditions we have here in North America were influenced by Asia and the Middle East thousands of years ago.

      @@RE-bg9dsThis is probably because Mesopotamia and Mesoamerica were the cradles of civilization where agriculture was first introduced, and thus, many plants were domesticated that form the basis of those cuisines.
      Most of the foods that form the basis of Mexican cuisine were domesticated in Mesoamerica: corn, chocolate, tomatoes, peppers, many beans, turkeys, melons and squashes, potatoes, avocados, jicama, papaya, sunflowers, vanilla, now called Spanish vanilla, and many, many other.
      Pakistan is close enough, or at least no significant body of water separates it from this area, to have been influenced by the plants and flavors that came to be in that region.

      As long as they get the vegetarian version of the refried beans. 😊The regular version is usually made using lard, which would be haram for them. Or, I suppose if the chef made them in-house, he could use rendered chicken fat in place of the lard. 😉

    Huevos Rancheros are usually served two lightly crisp tortillas, two sunny side up eggs, and a red tomato based salsa (Pico de gallo). Refried beans, Avocado, cheese, sour cream, and lettuce can be added. There is also a variant called Huevos Divorciados (Divorced eggs) where one egg is with red salsa and the second egg served with green salsa.

      Yes! I love huevos divorciados tambien. There is a little hole in the wall Mexican an restaurant in Bell Gardens Ca called T&A Taco, and they serve that dish and it is amazing!! In fact, they have so much great tasting dishes and the owners are super kind and generous.
      Their Chile rellenos are the best!

    Your cook is understanding Mexican cuisine well from very far away! Huevos means eggs and rancheros basically means cowboy or farm worker. So the name basically means cowboy eggs.

    I will be honest, im Mexican, i love this show, i love watching these great guys reactions, i wish, as a Mexican, they would be served real Mexican food that’s prepared the real Mexican way, so that we could get a true reaction to the food they are trying, in this video specifically, the eggs are a bit underdone, ideally, the white should be firm and the yolk runny.

    For those of you in the Western USA who don’t know, the Hispanic foods section of your grocery store almost certainly has Herdez brand Salsa Ranchera sauce in stock. It is a small can costing around one dollar.
    Two fried corn tortillas, two fried eggs, and this sauce, heated in a small saucepan is some of the most simple and delicious breakfast on our entire continent, and anyone can make it. Smoky, spicy, and savory, this sauce can be even more improved with a few sprinkles of chicken powder, fresh chopped chilies, or by mixing in a pat of butter.

      @@samstone936 the most common one in most grocery stores is Knorr brand Caldo con Sabor de Pollo, it’s got a green cap and it’s in the Hispanic food section. It’s in like half of all Mexican food you’ve ever eaten. If you’re there pick up some Goya brand Adobo all-purpose powder and some Sazon packets. If you’ve ever wondered why your home cooked Mexican food doesn’t taste like the restaurant, those three things are probably why.

    Whoever is cooking these dishes has great attention to detail and ingredients. Even going so far as to replace certain ingredients and spices with ones that are native to their country either because they can't them in their area or because they can't eat them for whatever reason but this person is a fantastic chef

    Tahir, there is such thing in Mexico as what you describe with a second tortilla (roti) on top, is called sincronizada (synchronized).

    Tahir is right, it's boiled beans that are smashed until smooth. They're called refried beans. Eggs and beans go good together, and I mix refried beans with scrambled eggs, onions, tomatoes, and hot sauce.

    Tell them the translation: "Huevos" means "Eggs", and "Rancheros" means "Rancher style". So this is the type of Mexican Breakfast-Eggs that workers eat on a ranch before heading out to 'herd' the Cows (cattle). Traditionally the sauce is slow-cooked with tomatoes, onions, chilis, and bell peppers (capsicum) and the strained so its smooth. Three Corn tortillas are soaked in the sauce and laid on a plate. Then three Eggs are cooked separately so the yolks are still runny, and then placed on top of the three sauce-soaked tortillas. More Sauce is poured over it all followed by chopped herbs which are sprinkled over it (herbs like coriander/cilantro, and chopped green onion stalks - Note: after the Spanish came to Mexico garlic, shredded cheese [which melts], and sometimes sour-cream was added on top). This completes the traditional "Huevos" part of the dish, which is essentially a plate of soupy red sauce with a bed of soaked tortillas covered by three eggs. To make it a full "Rancheros" breakfast , the extremely sauce-drenched Huevos must be served with a large side-dish of 'Refried Beans' to fill the stomach, (beans that are slow fried into a thick paste and then cooled and fried a second time in beef lard to thicken and flavor), and a stack of at least 6 tortillas to sop up the sauce (usually flour tortillas because most Ranches in Mexico are up north near the US border, where cows can easily graze on grass [which no other animals can live on except horses], and where wheat is more common than corn). This makes Mexican flour-tortillas very 'Roti-like'. This also makes for a huge and filling Rancher's breakfast - thus "Rancheros" style "Huevos" which is fit for a king - and very filling.
    Huevos Rancheros is also a common breakfast in Texas, New Mexico, and Arizona in the USA, where cattle is also herded by American 'Cowboys' - (but here they often make their tortillas from a locally grown "Blue Corn" which actually produces a naturally blue colored dough used for tortillas, and fried chips; all dark blue - one of the least natural colors of any food product). However the taste is exactly the same as it is from regular corn.
    Because Mexican culture is also very prevalent everywhere in the United States, this breakfast of Huevos Rancheros can be found in nearly every US city - and in the southwest it is made in most homes and restaurants as a favorite dish, although in the US shredded lettuce and chopped tomatoes are often placed between the melted cheese and the dollop of sour-cream (both added by the Spanish). This traditional (though modified) Mexican breakfast dish is extremely popular all across North America, from Canada to Panama, but it is especially eaten in Mexico and the US - however, there is no doubt that "Huevos Rancheros" definitely originated in northern Mexico, maybe 300 years ago or earlier - it may have even been Aztec, as most tortilla based dishes are, going back two thousand or more years.
    Please tell this to Gul, Chaudhary, Nara and Tahir. They will appreciate it, especially Gul, who seems to be the 'food historian' in the group.

    First time to comment yet I have see nearly all of the TPT presentations. I watch it on TV, therefore cannot reply or comment there, and have to come to my computer to do so...
    I, too, am in love with Mr Chaudry and his family. It would be nice to know more about the "guys" and their homes and families (for the ladies, too), how many children, etc. I spend time with TPT every night, as it relaxes me before bed.     Ohhh, I haven't had Huevos Rancheros for ages. They are probably the ultimate hangover cure (up there with Eggs Benedict). There used to be a Mexican restaurant inside the Gatwick Airport terminal (of all places) which did the ultimate Huevos Racheros and it was always the highlight of any flight.

    Here in South Texas we make the salsa with diced onion tomato serrano pepper coriander salt and pepper . We boil it slowly adding small amount of water till its slightly thick . Easy over eggs and put the salsa added over the eggs . Soft flower tortillas . We eat it by tearing small pieces of tortilla and forming a scoop with our fingers and use a fork to fill the scoop and eat away . Sausage and refried beans . Damn now I want some .

    Only northern Mexicans use wheat flour to make the tortillas. Central and southern Mexicans use corn (processed in the nixtamal boiling way) for the real original tortillas.

    I love their pure emotions and it is nice to see them enjoying the food. Mexican seems to be a hit, similar climates lead to similar foods. I can’t remember if they tried a Mexican quesadilla yet, I’ll have to search through the videos.

    I have never seen this dish eaten by hand. Because it's floppy and runny it's eaten with a fork and knife. And you never even give them napkins.

    eggs can be prepared anyway you like the beans I've seen with this dish have always been refried pinto beans. And we always eat them with a knife and fork

    As a Californian, Mexican food culture is a deep and important part of my heritage. It makes me so very, very happy that you've enjoyed this.
    There is another dish that, while not specifically a "breakfast" item, you may also enjoy.
    It is called "Chili Verde Burrito."
    I've often had it as breakfast, by topping a few over-medium eggs on top of it. I hope you'll try it!

    My ex girlfriend is mexican. Her mom and grandma and dad made at least a dozen different types of tacos for me and like 6 different salsas. I swear if you want to truly enjoy mexican food. Start with the taco. Sounds easy but you have at LEAST a dozen different types of tacos and like 2 dozens type of hot sauce/salsa that you need to try. It's SOOOOOO GOOOOOOOOOOOOOOOOOOOOOOOOD. For example. Birria tacos vs a carne asada taco with lime+cilantro+onion. Two different ball games lol. I'll hit up some random taco shack or some taco truck in the hood just looking for my taco fix that i used to get from my ex and her family. It was so good. IN california good tacos are found everywhere. In my state the best tacos comes from taco trucks lol

    I like when Rana's tostada starts falling apart, and he resorts to the way Mexicans actually eat this dish, ripping into bite-sized pieces and dipping. It's hard to eat this meal like a tostada.

    Normally eaten with a fork and knife. Beans and cheese and fried egg corn tortilla fried and smothered in red chili sauce.salsa and cilantro, avocados and raw onions. Some add more chilis. 🙏✌🤙👍🌮

    I've said it before: you should have a cooking class now and then! This is something you can definitely teach these gentlemen to cook using local ingredients. (Mexican cheeses would be hard to find in Pakistan, but paneer is similar enough to queso fresco.)
