I usually add pecan or apple wood chunks and spread them throughout the lump, that way they burn evenly throughout the cook. I use a full basket of lump but you won't use it all for ribs, I will reuse what I don't use on future cooks after I snub out the fire. Lastly, I use a cement heat shield that came with the cooker to set up an indirect cook which works the best in my opinion because the heat rises up on all sides and cooks more evenly. I prefer to cook the racks on their sides because it takes up less room on the grill and it also seems to prevent the meat from drying out due to less contact surface area on the face of the grill. This is just my opinion but I've had great results doing it this way. Those are pork spare ribs but the instructions will work on all types of BBQ. Happy BBQ'ing!

What are your opinions on cooking the ribs vertically in the rack vs. just placing them on the grill?
I think they cook better that way and don't have the tendency to dry out like they do when they are lying flat on the grill.
