    Artisans curdle the milk by introducing natural whey from previous batch. Curds are matured and acidified naturally. Then Spinning "Pasta filata"...

      I'm italian, soi speak perfect italian. My dad is german so my german is also close-to-perfect. I know it sounds dumb, but once you know 2 languages learning new ones is easier because your brain is used to switch between them. So growing up i had english at school, but they don't teach ANYTHING there, it's horrible, so i just kept watching videos and films in english until i understood it pretty well, obviously my pronounciation isn't very good since i never speak it. I also had 3 years of french in middle school but i don't remember anything... so i don't know about the rest if europe, but here in italy learning languages at school? Forget it.

    I found a small container of "mozzarella di bufala" at this health food store near me, and I was so excited to try it since I remembered this video! It. Was. Exceptional. So soft and smooth, the most perfect ball of mozzarella I've ever eaten, AND the container also said it's lactose free which I wouldn't have guessed, but I guess that's the difference between cow mozzarella and buffalo mozzarella. I also gave some to my friends and now they blame me for ruining any other kind of mozzarella for them, because they don't want to eat anything else but the buffalo one! So thanks Alex for schooling me on the origins of mozzarella, I would never have known otherwise and would have missed out on something fantastic! :)

    I speak Spanish and could understand like 90-80% of what you said in Italian the rest was just gibberish, I just find it funny that we all are like brothers by language since we have the same mother (Latin) and yes I know English is also a “brother” but it is just so different like french I am thinking about learning Italian

    Props Alex. Watching the masters doing their craft and seeing how vastly different the homemade vs industrialized product is was ASTOUNDING. Best of luck on your next batch of mozzarella :) By the way, did you get to try their scamorza (it's the one tied with a string in the middle, like a fat dumbbell)? I saw a peek of it in your video and I couldn't help but drool over that too haha (that makes beautiful risotto).

    • @emalinel

      许可臻 I don't really have a recipe I use at home (I kinda just experiment a lot), but a recipe I've been meaning to try for a while is from Tastemade called "Risotto al professore" by Frankie Celenza. It's got all the flavors I love (red wine, a few types of cheese, and radicchio that really rounds out the dish) and he's great at just making Italian food in general

    • @ABaumstumpf
      @ABaumstumpf 6 ปีที่แล้ว

      It is quit easy to industrially produce mozzarella indistinguishable from handmade one - but people simply wouldn't buy it. they prefer the current industrial one at large - that is why it is that way right now.
      And i must say - for many thing i do prefer the harder, not so juice industrial one.

    I love how you try news things and then learn from the masters and make humble comparisons. I will not be able to appreciate the store bought mozzarella after watching this. BTW, I was impressed that you received the attention of Jacques Pepin with your French omelet video. I actually learned a lot about the technique watching you fail over and over again. I think I have gotten it right in 1 out of 10 trials.
