As a child, I sometimes lived with my grandmother, in rural West Virginia. Huckleberries and strawberries grew wild. I remember helping to pick them, then watching as Grandma canned some, and made pies, jellies, and jams from some of them.
Oh wow..another canner I need to buy! I think that would be so much faster boiling such a small amount of water. And I'd love to get my hand on a ton of those berries! Thank you for teaching and sharing!!
I have used a steam canner now for three years and doubt I'll ever use a water bath canner again. The light weight aspect of it, not to mention how much faster it is because of quicker boiling poing cannot be beat! 💗💗💗
Oh yes Ma'am that's some good eating right there. Back when I was much younger, I grew up in Arkansas. It was the first time I had heard of Huckleberries. I loved them. One of my Aunts would cam Huckleberry Jam every year and made sure that I got a few jars. I have not had any in many years because we moved from there. And I can not find them here in AZ. Thanks for the memories. God Bless You.
I’ve seen one of these pots/canners but didn’t know anything about it. I don’t have a need but thanks for sharing the process. So interesting. I’m a canning nerd. Love it! The recipe looks wonderful though I have never huckleberries.
My mother in law gave me something that looked like that many years ago but it was a baby bottle sterilizer, wish I would have kept it . The jam looks so yummy.
I've never heard of steam canning either! I really, really like the idea of it being more manoeuvrable due to it being much lighter in weight. I would think this method would benefit those with physical limitations. Thank you for introducing this to some of us beginners and keep up the great instructional videos!! Ta:)
There are videos showing how to steam can in an instant pot too. I've done it with blueberry jam and it worked fine. You just have to do small batches, only 4 pints at a time. Haven't done half-pints, so don't know how many of those a 6 qt IP holds.
It drives me crazy when people say ohh no you cant do it like that because its not approved.. smh.. people been doing this for centuries and aint dead yet, but now that the government approved it its magically safe now.. ive been canning milk, rice, butter, banana and more and not dead yet. Used beef last week that my grandmother canned and shes been dead for 15 years now.. died at 97 years old.. you people and your obedience to the government..
Thank you for showing the steam canning process. This clears up a lot. Now i'm seriously considering adding one to my pantry.
I want one too.

That steam canner is neat! I have a victorio brand water bath canner and it has one of those nice gauges on its lid too.
I’ve never heard of steam canning 🤔 intriguing!
Same here, I've never heard of Steam canning either. I don't think I could figure out that gauge. Lol

I figure it's her kitchen, her rules. Our kitchen, our rules.

My daughter wanted to know if you can a sauce ? Water bath ? Huckleberries.
How can I get my hands on that book please 👍
Wish I could find the berries
Here's the link if you want to order the cookbook she shows. setp.uga.edu/
Can I also add 2 tbls of bottled lemon juice?
You can. It might add a little flavor.
