Made this last week - didn't intend on eating more than a slice or two... then went and ate half the pie over the weekend. Love the tartness of the filling, love the flavour depth and texture of the crust. Maple syrup and whipping cream belong together. Definitely a repeater.
I just knew this pie was going to be amazing just by looking at the thumbnail. And adding heavy cream to the graham cracker crust is genius. Thank you, I will be making this for a family members bday coming up. They're going to go nuts! We love key lime in this house!
Honestly making your own graham cracker crust makes such a huge difference because the store bought ones are always super thin. I like mine to be like half an inch thick at least lol. Tosi's recipe for it plus that key lime filling? Hot damn. Good stuff bro!

My husband and son loved it. You make it easy for us amateurs to follow. This is the fourth recipe I make after watching your videos in less than a week and I think I have a problem now lol I can’t wait for another-please make more Mexican dishes...how about the Barbacoa?
@@jakethesnake17 My guess is that by rolling them, you're popping all those little juice sacs that citrus is made of, and that's why it gets so much softer. You don't necessarily get more juice, but it's easier. It's basically pre-squeezing before cutting the limes open, so juice doesn't get everywhere.

I made it. This was my first time trying keylime pie. The crust was delightful and the texture was so nice and creamy. If you like keylime pie, you will enjoy this. Still, I must issue a warning to anyone, who like my previous self, has not tried keylime pie before. Key limes are extremely sour. I like sour things, but this was a little too much to handle. I felt that if I ate more than a slice, I would feel sick.

Love key lime pie.. it's one of those regional dishes that tastes better if you're there. I don't know if the limes are fresher, or if it's completely in my head, but goddamn the Florida Key's have incredible key lime pie.

To get a deeper Key Lime flavor I just cut the key limes and put them in the blender, peel, seeds and all. Process till it is a thick liquid and strain through a mesh strainer. I do it with lemons for lemonade as well. I had this pie in Jamaica and they use a shortbread mixed with coconut crust and it is wonderful.

A great way to juice key limes is with a garlic press! Roll them, then cut them in half and put them in the press and squeeze away! Keeps most of the seeds and pulp out, but I still strain the juice afterwards. I am obsessed with key lime pie and will be trying this one for sure!

Maybe under a different name? Try looking for calamansi limes or calamansi juice. In fact this citrus has several names but referring to the same type of limes. I have seen aussie cooking shows where this lime was used - usually in asian dishes ( such malaysian or indonesian or thai) Hope my idea helps.
Looks like a great pie. If you don't want to mess with the key limes, get ahold of a bottle of Nellie and Joes Key West Lime juice. You won't be able to tell the difference and it's a hell of a lot easier.

TIP- before cutting roll your key limes with your palms on your counter to soften the pulp and you get more juice 😊 you can do this with any citrus when juicing …
Ill try that! I like the MSyrup whipped cream. This reminds me of a simple drink combo...milk ( or nut juice of your choice ) & maple syrup with ice. Tastes like caramel/butterscotch! 😮

Quick tip: if you roll the limes before squeezing them, you get extra juice

Also you can microwave one for a few seconds before you cut it. It makes a huge difference

Use egg whites for meringue. Or pavlova, which freezes well, and can be cooked in the stored heat after the pie is baked.
Try brown sugar in your crust ! It's such a game changer.
