To be honest, regardless of hygiene and methods used, If I was walking past there and seen these guys cooking up, I'd be asking to buy some of this. I love street food from around the world. I remember ordering fries in a beach-side cafe in Turkey and when they arrived at my table there were black bits in the basket, when I looked closer, it was deep fried flies. I still ate the fries and I'm still here so no worries as long as its cooked! :-) (and I didn't get the shits)

If I had to make an educated guess, each big pot should serve at least 200 people- so at least 400 servings, but maybe as many as 500. My other educated guess is that because they are on a busy road near the sea, they probably sell this "to go" to truckers and other travelers as it lends well to large quantities, can be packaged easily and is something mostly everyone likes (who doesn't like Biryani?). It is a good money making endeavour if they can sell it all. I wish them luck and success in the new year....and you too!

More than a billion population to feed hungry stomach. We Indians have inbuilt resistance and we can easily tolerate plus minus not unlike spoon and fork feeding. Overall this preparation is the best taken into consideration of meager resources and outdoor cooking.
Now this is real food!! It tastes even better being cooked beside the road! Try it!! You don't find earthy" taste anywhere else but right here.....hehehe..... :) yum.
