Oh man. This happened to me two years ago and it's the most frustrating thing I've ever experienced in my life because I didn't know if I was going to recover it or not and it seems like google support don't give a shit about nothing in this case. Luckily my songs were not deleted and after about three long and agonizing months I managed to recover it but i had already lost many subscribers and views as the hacker had hidden all the videos during this time.. But damn bro, this is such a bad situation. I wish you luck in recovering the channel and don't give up ! Meanwhile I offer to help with this new channel, like maybe put the link of your channel in the comments of my videos, help you promote the channel a little. I don't have a very big channel, but something will help I guess. I do viking music too, so maybe that will help a bit. I just want to cooperate like from one musician to another because I know that it is very fucked up to create a channel from scratch and I understand that also economically it is quite bad to lose an income..
