That's the best version recipe of this pie I've seen , I've been searching for some time , my Nannie was a professional chef in Tate and Lyle , sugar refinery and used to make these pies for the workers there on mass , about 50 years ago . She would bring us one home and we would always look forward to it . She would make it on a plate in them days and I used to love it cold . My grandmother was famous here in Ontario, Canada for making these pies every single day while I was growing up. She is 88 years old now so baking is a little outside her purview but it is still one of my favourite memories of growing up, the smell that these pies give off while cooking is simply one of the best you'll ever smell all your life. So simple but so so good.

That's a great story, Mike. Isn't it strange that we remember the cooking of our grandmothers. When I was young, sometimes my grandma would make an Irish fried breakfast. I was not allowed in the kitchen and I had no idea how she made it so amazingly tasty. Later when I was a student, I tried to recreate her meal and always failed. One day I had no cooking oil and used butter and that was it! She used butter to cook everything!!! Anyway, I hope that two years later, you are OK and enjoying Mr Kirkwood's recipes 😋😋
I agree! I have such great memories of my Mom’s and Grandmother’s recipes. I still make many of them for my grown children and grandchildren. Many people just don’t cook anymore. I fear some day my great grandchildren may be saying “My Mom made the best green smoothie ever!”. That can’t even compete with all the family favourites at Christmas and other gatherings. 🇨🇦

I made the mince and onion pie yesterday but using the hot watercrust pastry, it was amazing. It wasn't as pretty as yours and I probably could have rolled the pastry a bit thinner but it was my first ever attempt at pastry so overall I was happy with it. You are an excellent teacher and I smile as you use all the ingredients in your bowls and pots, like we all should, rather than leaving a lot of wasted ingredients behind.

Hi John,,, talking of fatty mince,, I made spaghetti bolgnasse last night,, and got the large tray size,,,and after the mince was cooked throughout there was an excessive amount of fat or oil from it nearly a full cup of oil,, as I used a plastic ladle to drain it off,,, as I was using a non stick fry pan,, anyway the spaghetti bolgnasse turned out lovely,, less the oil,, I've always loves steak n kidney pies a d mince pies so this resipie I will try too, with lean mince,even if I have to get it from my butcher!!!. I have a non stick slow cooker too , very usefull, and so easy to clean,,made stews and a sausage casserole in it,, great appliance to have,as you can cook ahead ready for when your ready to eat.stay safe have a great week John.

112 yrs ol my grandad would be now and I’d bet his made this pie in heaven since 1995. Cooking for majors in Great War he would keep scraps for the lads. My Mum was a school dinner lady . That one brought back many happy dinners. As anything could go in a pie dish , from steak and Kidney to Gooseberries( my favourite) .Now as im on a diet there’s no chance of getting that past the Mrs ... unless you slip me one in the post John . I made this for dinner tonight and it was a hit. Served it with mashed potatoes and mushy peas. Wish I'd had beef gravy for it. I just ordered some Bisto. I'm a novice pie maker, and as you rightfully pointed out, rolling one out takes practice. I did not have any lard or shortening, so I used 170 grams of butter instead. The pastry came out fine, perhaps a bit rich. In what way would it be different if I'd used half shortening or lard instead of the butter? Trying to learn. Thanks for all your videos.

Tate and Lyle , sugar refinery and used to make these pies for the workers there on mass , about 50 years ago . She would bring us one home and we would always look forward to it . My grandmother was famous here in Ontario, Canada for making these pies every single day while I was growing up. She is 88 years old now so baking is a little outside her purview but it is still one of my favourite memories of growing up, the smell that these pies give off while cooking is simply one of the best you'll ever smell all your life. So simple but so so good.

That's a great story, Mike. Isn't it strange that we remember the cooking of our grandmothers. When I was young, sometimes my grandma would make an Irish fried breakfast. I was not allowed in the kitchen and I had no idea how she made it so amazingly tasty. Later when I was a student, I tried to recreate her meal and always failed. One day I had no cooking oil and used butter and that was it! She used butter to cook everything!!!
Anyway, I hope that two years later, you are OK and enjoying Mr Kirkwood's recipes 😋😋
I agree! I have such great memories of my Mom’s and Grandmother’s recipes. I still make many of them for my grown children and grandchildren. Many people just don’t cook anymore. I fear some day my great grandchildren may be saying “My Mom made the best green smoothie ever!”. That can’t even compete with all the family favourites at Christmas and other gatherings. 🇨🇦

I made the mince and onion pie yesterday but using the hot watercrust pastry, it was amazing. It wasn't as pretty as yours and I probably could have rolled the pastry a bit thinner but it was my first ever attempt at pastry so overall I was happy with it. You are an excellent teacher and I smile as you use all the ingredients in your bowls and pots, like we all should, rather than leaving a lot of wasted ingredients behind.

Well John, you're fast becoming public enemy num 1 in my house, I made this pie yesterday with chips and mushy peas (lush) followed by your Lemon and Orange drizzle cake... what can I say apart from bloody delicious. Hi John,,, talking of fatty mince,, I made spaghetti bolgnasse last night,, and got the large tray size,,,and after the mince was cooked throughout there was an excessive amount of fat or oil from it nearly a full cup of oil,, as I used a plastic ladle to drain it off,,, as I was using a non stick fry pan,, anyway the spaghetti bolgnasse turned out lovely,, less the oil,, I've always loves steak n kidney pies a d mince pies so this resipie I will try too, with lean mince,even if I have to get it from my butcher!!!. I have a non stick slow cooker too , very usefull, and so easy to clean,,made stews and a sausage casserole in it,, great appliance to have,as you can cook ahead ready for when your ready to eat.stay safe have a great week John.

I like making this with just a bit of plain flour instead of stock cubes (and good quality fresh mince). Reminds me of school dinners back in the 70's when they were fantastic quality.

Thanks John - I now understand although I had no problem with your previous comments which I thought were very useful. I had thought your new oven did not behave the same way. However, your comment that using the bottom element + the fan is exactly what I need to know although I think my new oven will actually be using top and bottom elements and fan assisted. Absolutely! One of my favourite childhood memories! Mum was a good cook and was great at experimenting and substituting with whatever she had in her cupboards! Her generation went through wartime rationing and got adventurous with their recipes!

My Mum was a school
dinner lady . That one brought back many happy dinners. As anything could go in a pie dish , from steak and Kidney to Gooseberries( my favourite) .Now as im on a diet there’s no chance of getting that past the Mrs ... unless you slip me one in the post John . PS ill send you up some water buffalo meat from a local farm , cook it slow its lovely .. beef with little more flavour . In return for a pie 👍

I made this for dinner tonight and it was a hit. Served it with mashed potatoes and mushy peas. Wish I'd had beef gravy for it. I just ordered some Bisto. I'm a novice pie maker, and as you rightfully pointed out, rolling one out takes practice. I did not have any lard or shortening, so I used 170 grams of butter instead. The pastry came out fine, perhaps a bit rich. In what way would it be different if I'd used half shortening or lard instead of the butter? Trying to learn. Thanks for all your videos.
