I enjoy your videos I make my enchiladas sometimes with just cheese and onions no meat and maybe black olives I make my own sauce and thicken it with flour my mom used to make us enchiladas with no meat for our bday when we were children yum God bless mm el Paso
Hey Catherine, I'm also an enchilada lover as you are and really like your videos! When I make my enchiladas, I like to make them more "Tex-Mex" (I'm a ex-Houstonian) by combining a regular can of red enchilada sauce (I like Old El Paso) with a regular can of chili without beans - I use that to coat the bottom of the dish and then spoon over the enchiladas then top with cheese - really good!

You must be a mind reader! Just last night I was thinking how good enchiladas sound! I’ll have to go to the store for some enchilada sauce and then I’ll be enjoying these, and they sound delicious! Thanks! PS - I noticed you dragged your knife across your cutting board to gather your onions. If you use the back of your knife instead of the sharp side, it will save your knife blade.

Just out of curiosity, I wondered if you could tell me what brand of corn tortillas you like to use. I am picky about tortillas, as I think many of them lack flavor and fall apart too easily. Thanks!
I love enchiladas. The best thing about them is you can use any kind of protein you have cooked up. It is a great way to use left over chicken, beef or pork.
Love the way you thickened the enchilada sauce! Never thought of doing this! I do like Monterey Jack for my cheese, however I sometime mix my cheese! Do you have a good recipe for the Mexican rice?
Hi Catherine!!! Another recipe I am going to make. It looks delicious!! What size tortillas do you use. Also, is that Celtic salt you have in your salt shaker, or is it regular salt? Is it Celtic salt you put in your salt grinder also? Thanks for sharing this recipe.
The salt grinder has seas salt in it, we don't grind the Celtic salt. I used 8 inch tortillas for this one, but you can use the bigger ones if you want.
