  • This episode of the series “Folks” from March 25, 1984, focuses on black chefs in Louisiana. Genevieve Stewart first interviews Chef Herman Perrodin of Didee’s Restaurant in Baton Rouge. Rob Hinton then visits Chez Helene in New Orleans and interviews Chef Austin Leslie. Lastly, Stewart interviews Chef Charles Bailey, the executive chef at the Capitol House Hotel in Baton Rouge. Chef Bailey also prepares Steak a la Genevieve for Stewart.
