Julia, I honestly think that this is one of the best videos you've ever done. It's like exploring a new chapter of Peruvian gastronomy. The food from Arequipa is so rich, flavorful, and delicious that it can't be found anywhere else but in the White City, as Arequipa is called.
Even the Rocoto is blanched three times to reduce its spiciness for preparing Rocoto Relleno; some will come spicier than others. The scalloped potatoes that came with this dish are there to help if the Rocoto is too spicy. I'll never forget the amazing flavors of the stuffing.
You won't be able to find a Shrimp Chowder, AKA Chupe de Camarones, as delicious as the one in Arequipa. This is one of Arequipa's signature dishes, along with Ocopa and Adobo. Well done!

Julia, your videos are awesome. I am glad that you had the chance to try Arequipan Cuisine, which is still prepared using ancient cooking techniques that have remained unchanged for over three centuries. A notable example is the use of firewood and batán, which is akin to a large mortar and pestle. To provide some perspective, in the year 1600, Arequipa was a city with 30,000 people, and these same cooking techniques were already in use. I'm looking forward to more great videos from you. 😊
