Oh yes, there are plenty of food options for almost all dietary requirements. There are lots of vegetarian options in the buffet and on the menus of the MDRs. Many of the best Indian dishes are the vegetarian options IMHO! It has also been our experience that if you have a special need or perhaps a food allergy you can speak with your waiter or the Maitre'd in the restaurant and the chefs are more than happy to accommodate.
There were some solo cruisers on the Beyond - but given the time of year (summer) the biggest thing we noticed were families. We did notice a number of events and get togethers scheduled for solo cruisers but we did not attend any to see how well attended they were.
The Asian section at breakfast on Celebrity is some of the best food I've had on cruises!

We were on a Celebrity cruise 6 weeks ago and lots of hash browns then!
