Hi Stephane, how do I get my crepes to look like yours? Your crepes look so lovely and golden whereas mine are pale and pasty with dark spots and definitely not very appetizing in appearance. .Would it help if I used only egg yolks, a different flour from my standard plain flour? I am using a 30cm non-stick crepe pan on medium gas.
I’ve tried this and it turned to be a great recipe for me, who do not have much experience in baking. I used only one egg for the soufflé part, egg white for meringue, and egg yolk for custard. And that is actually enough for two. At that point I didn’t know what would happen if I put all of the mixture into the pancake until it was cooked, the upper side of it sticked to the top of my toaster and literally get burning because of caramel and puffed out soufflé 😅 So there’s an advice for who gonna give a try: don’t be greedy to have too much soufflé inside. Hope y’all stay safe in the kitchen.
