Tables a stainless steel, like the ones in restaurant kitchens. The one(s) that are a beige-yellow color with orange borders are heat-resistant Sil-Pat mats.
The tables with mats are kept at 200° or 220° Farenheit, to keep the candy malleable so it can be shaped. They wear special gloves for safety.
The rollers where the big roll of candy goes are heated, too. That is so the Candy Maker can compress it with his hands to smaller strands, for making the lollipops & long strips for short pieces. The bare stainless steel tables there are not heated, & the candy cools & gardens.
They work magic there! 🎉❤😊
