My late mother (Armenian woman escaped from Turkey) would have liked this recipe. Most imam bayldi recipes stuff the eggplant, whereas I was raised on sliced eggplants layered into a Pyrex dish and baked. Not sure about this stovetop version but maybe worth a try. Thanks
