- Head Pastaia Chef Roberta of Pasta Evangelists shows how to make the classic Ligurian shape - trofie. She'll lead you through forming the pasta bianca, or vegan pasta, into the trofie shape and then recommend some of her favourite sauce pairings. This typical shape from Genova so classic basil pesto is a great option. Buon appetito!

This is such a great explanation! Thank you for the vid.
I've tried this and had trouble getting the spiral but will keep on practising, on the plus side all the shapes I did make still cooked well and were delicious with my home made pesto
The spiral is quite difficult to master. Keep practicing and we're sure you'll get there. Glad to hear it tasted delicious! - Lia
thanks for teaching this! I will trie to make trofie with my hand. 🥰
Amazing! Please make more videos!
I tried to make this following some Ligurian nonne who use 00 and it was impossible. Back to semola.

Great programme, but do you realise that as viewers we are watching the whole process backwards. The hand on the left of our screen is your RIGHT hand and it would be much easier and logical if the camera was viewing from behind you looking at your hands the way we would see ours so we can better follow what you are doing. Cheers
You can make it with either hand, so it doesn't really matter? It's not dance choreography. She repeats it several times. I think the movement is simple enough to understand they way it was presented.
