The fact that the refrain mentions the old man but not the horse makes it sound a little like the "him" in some of the verses is the old man and not the horse. Imagine never having heard the song before and missing the beginning of it. :p

I can imagine the lyrics about using parts of the horse or "riding it hard" allude to the sailor's initial pay being 'borrowed' and perhaps used to repair the ship; and the sailor having to survive without the pay until they set sail. Or referencing the sailor spending it freely as soon as he receives his pay

Sarah is correct. Songs for entertainment aren't shanties, mostly because they aren't structured like shanties. Songs were sung for entertainment on land and at sea, but not the same songs as were sung for work.

Is the story of the advance pay the reason why in the AC: Rogue version of Go To Sea No More says “I’ll take your advance and I’ll give you a chance” while the La Nef album says “I’ll give you a chance, now take your advance”?
Yes. The advance is definitely referred to in that song. I sang it in Rogue, but I had learned it from Nelson, who sang it on the La Nef album. I think he says "I'll give you a chance AND I'LL take your advance" but he says it quickly and not super clearly.

Yeah, that was the whole point of the Black Flag versions: we had to sing badly. It was fun but I'm also happy to have these cleaner versions.
