It depends on the saddle, which is probably why you didn't get an answer. You would have to undo the bleed knot and pull off any Conchos/rosettes. Sometimes the string is just held on by a nail but on better saddles it goes through holes in the tree. Getting the string through the holes can get complicated and this video is really not about that anyway. You should be able to find a video on TH-cam that shows the process. Good luck!
Here is a video on how I restored an old well-built saddle. I didn’t do it for prettiness. I did it to get it back to work. It’s a good using saddle. I had to replace the saddle strings. I didn’t replace the fleece at that time so I ran the strings through the fleece, but if you’re replacing the fleece run them between the skirts and fleece then through the tree and then throughout the leather on top of the tree and finally your rosettes and concho and do the blood knot that I show in the video. I forgot to mention it in the video but make sure to bevel your strings and oil or condition them with an animal fat or animal oil based product before running them through the saddle. It’s usually easier to bevel the edges before oiling them. It also helps if you make sure to have a very sharp point at the tip of the saddle string that very gradually goes back to the width of the string over the course of an inch and a half or two inches before trying to string the saddle. It makes it a ton easier. Good luck!
If that was really a ROPER's saddle why would it have saddle strings - made to tie up and store equipment and supplies. Trying to augment something that was designed for another purpose is like trying to take the right side tires off your truck so that it will corner better.\
It’s a ranch saddle. You’re right, roping saddles usually don’t have strings so the rope isn’t getting hung up in the strings, but a ranch saddle needs strings because cowboys are out on the range sometimes 25 miles from the ranch and further from anywhere else and they need to keep gear on their saddle in addition to roping. Cowboys out on the range often carry saddlebags, medicine bags, fence and hoof repair tools which are often in their own sheaths, sometimes a rifle scabbard, and a canteen. Strings are necessary to hold all this in place.
