Another niche market seems very profitable are live plants folks can buy and take home in pots, you could do basically everything from flowers to salad greens to live Christmas trees. Just an added idea

If you build raised garden beds, with gaps in the slats, or holes of some sort, you can triple the growing foot print. What I do is take a large diameter plastic tube, drill a pile of holes in it, place it in the center of your bed and back fill with soil. Throw all your good organic waste into the tube, that worms like. The worms consume the food, give worm castings, adding high value organic fertilizer to your beds. My experience with raised beds is that they seem to use lots and lots of soil throughout the season, the pipe method does help a lot to maintain soil levels as well. I'm planning to start farming inside a seacan this fall, if you can grow off season local veggies, they are also worth more in the winter time for folks in northern climates.

Okra needs to be dried a little bit(not to the point of total dehydration, just 15-20% first and then breaded and fried. If you do that, the sliminess goes way down and you get crispiness.

I believe this was pretty thorough. I really needed to hear the face slap about record keeping.
