Glad to see you guys are enjoying our food :D A little context note on the oscypek: since it's January, what you've had was probably a golka - a cheese made in a same way to oscypek, but primarily made of cow's milk. Oscypek is a protected regional product under the EU laws and therefore to officially name the cheese product 'oscypek' it must meet several regulations, including (but not limited to) being made of at least 60% sheep milk and manufactured in a specific region of Poland from May until September (and can be sold only until mid-to-late October) due to the quality and quantity of sheep milk. Next time you visit, head to the mountains in May-September and you'll be able to find a truly proper oscypek :)

I see that tourists try the same dishes and Polish cuisine is rich and diverse. When you come back to Poland, try roast duck, bigos, chicken liver fried with onion, try Polish cakes; apple pie, cheesecake, poppy seed cake and others. Without stress, you pronounced the word "thank you" very well, and Poles know that foreigners have difficulty reading and speaking Polish, but they appreciate that they try. What you ate was a bit wrong; Potato pancakes are not made from puere, but from grated potatoes, an egg and finely chopped onion are added and are eaten hot, you can eat them with cream and sugar, with goulash sauce, the "Gołąbki" dish should be warm and usually topped with tomato sauce. not soup. I saw that the cream tubes were delicious. They are delicious when the wafer is baked and crispy and with natural whipped cream - my favorite. Cool and positive vlob.

'Zapiekanka' as a street food in Poland was mainly popular in the early 2000s. Today it's less popular, because the selection of other various dishes from various cuisines around the world, available as street food, has developed significantly. But based on this nostalgia, there are still bars selling 'zapiekanka', although I personally associate it with poor, unhealthy, cheap food. In general, Polish cuisine is very interesting, apart from the dishes in the video, it's not only pierogi, bigos, sausages and soups, but thousands of various dishes, combinations of meat, fish, vegetables, fruit, mushrooms and all the treasures that Polish fields, forests, lakes and the sea are rich in ❤

Potato pancakes are somewhat oily and that is normal, but they shouldn't be too oily. The thing is, the potato dough soaks the oil, therefore there is variety of things you can do to prevent that.
Frying in a very hot oil makes them soak less fat. Also, right after taking them from the pan, the pancakes should be put in a bowl or on a plate, that is lined with paper towels or tissues - they will soak the excessive oil back from them. If you were to try potato pancakes in different cities and places, you will notice, that they're not always the same - it just depends on cooking techniques.
Also, you may encounter different methods of grating the potatoes for pancakes. Sometimes, potatoes are grated to strips, resembling pasta - but this is NOT a typical polish potato pancake, this is more of a swiss "rosti". Classic polish potato pancake recipe calls for grating potatoes into consistent, creamy mush. Results may also vary, depending on what type of potatoes you are using, since some types hold more water in them, some less. If there's a lot of water in grated potato pulp, you should dispose of it, before mixing in flour, eggs and spices.

@@KristyandSteve Currently, the real Polish winter can sometimes be seen in the Tatra Mountains in a town called Zakopane. The town is located 75 miles south of Krakow on the border with Slovakia. The "oscypek" cheese comes from this region. I suggest visiting a lake in the mountains called Morskie Oko sometime in the summer. There are swimming pools with hot thermal water nearby in Bukowina Tatrzańska. The mountains themselves are not super high because the highest peak is 2,600 meters above sea level or 8,530 feet high. There is a cableway to the peak called Kasprowy Wierch (6,561 feet high) from Kuźnica. In a small village called Dębno (accessible by bus from Nowy Targ) you can see a historic wooden church from the 15th century from the UNESCO list. Enter the phrase "Church of St. Michael the Archangel in Dębno" into the Google search . Milk Bars in Poland are cheap because they are 50% subsidized by the state

@@KristyandSteve Near Krakow there is a 13th century salt mine in the town of Wieliczka that can be visited. In Krakow there are places and the historic factory itself from the movie Schindler's List . In the north of Poland, in the city of Malbork, there is the world's largest brick castle, which was once ruled by the Teutonic Knights . It is also a land of lakes called Masuria, where there are 3,000 lakes . You can also visit the real ruins of Hitler's headquarters called the Wolf's Lair in Kętrzyn if you like history and watched the American film Valkyrie. The city of Gdańsk is located on the Baltic Sea. The beaches are long and sandy, although the water temperature in the Baltic Sea in summer does not exceed 23 degrees Celsius . The eastern part of Poland, i.e. the area around the city of Białystok, resembles a Russian province from Hollywood movies because it is inhabited by Belarusians .

We spent about USD$45 per night for our airbnb, which was about 8min walk into the "Old town" (great location!). Eating out, we spent about USD$20-30 per day - we did cook one meal per day at our airbnb and ate out for the others. Getting around on the trams was very inexpensive. You could do it a lot cheaper than what we did, or a lot more expensive. Id say average budget maybe USD$600-$700 for a week would be a comfortable amount ☺️
