- This week I’m finally attempting something I’ve wanted to do for months.
I love to bake and have been doing it for years now. I enjoy switching it up and trying to stretch my abilities each time I try a new recipe.
But there was always one recipe that scared me…

Beautiful! On the other end of the spectrum is Claire’s banana bread…the best banana bread recipe in the world and EASY! I’ve never made croissants, but have watched enough videos to realize exactly what you were making S soon as I saw you do that first fold over! You’re always inspiring; maybe I’ll try this recipe….SOMEDAY!😊

You totally crushed it! The lamination was perfect Me? I'm still figuring out my new air fryer. I'll catch up to the rest of the cooking population in time. What I did make that I considered fussy but came out pretty good was those little French cookies, Madeleines. Of course my friends always say nice things, but they ate them all gone. So that's a good sign. I bet your kitchen smelled wonderful. Congratulations - you had nothing to be worried about! Thank you for sharing this video and for making croissants during the California heat wave. 😊

Good job! I've made croissants, and I'm here to tell ya, it's no walk in the park. I really wanted to reach through the screen a time or two and give you a hug and tell you everything was going to be all right, which it was , of course. To quote the Pasta Queen: "Gorgeous! Just an idea on rising the dough in a cool home. Pre heat the oven for about a minute, turn it off and put the dough in the oven with the oven light on and let it rise in there. I always do that when baking. Great job!
I do the same since house at 60 in winter. Plus use sometimes RecTec so has smoky flavor bread.

Justin, you did great for 3 digit weather.🔥 Horwever, in the future you might want to wait till the fall and winter to make croissants, it makes the tedious process much cooler.😊

Edit : they turned out amazing!!! Good job! Here in France, we put a chocolate bar in the middle, when you roll them. It's called "croissant au chocolat" (chocolate croissant) and sometimes they add icing on top of them. You can also find croissants with Nutella inside, frangipani, white chocolate, pistachio cream... We get creative with our pastries 😂)
I would be MASSIVE if there were “wild croissants” on my street corners!! 😂

I used Jacques Pepin Metode. Not hard to do, just a pain. Not the best recipe for 100 degree weather. Your pin is too small, and you are supposed to put one finger print per roll, so you don't loose track.
Tell the writer of that cookbook to make a "Croque-en-buche", Holy crap that is the very hardest thing I have ever made. No form, and covered with spin sugar. A living HELL.
BTW, you did a great job.
The one time I tried to make croissants at home I ended up with a tray full of butter fried ... things. they were good, but they were not croissants. I know it can be done, my mom used to make danish pastires at easter and christmas, but alas, not by me.

Would it help to freeze your tools in between turns? I am thinking that the room temperature rolling pin and cutting board were working against you.
