Itachi's right about death at least for the Akatsuki they all reveal who they truly were before dying. Sasori-Dying in his parents arms he shows that he was just a child wanting to be loved. Deidara-He died pridefully killing himself in an explosion showing that he was a confident artist that died becoming what he loved. Itachi-He died helping his little brother showing his nature as a kindhearted familyman who would sacrifice anything for others. Hidan-He dies worshipping Jashin and vowing to always keep fighting showing his complete devotion to the religion Kakuzu-This ones a little more headcanony because we don't know much about Kakuzu but Kakuzu's refusal to die even after getting hit by the rasenshuriken could show his determination to live since even when his village elders forsake him for failing to kill Hashirama he still lived on. Pain-He dies reviving hundreds of lives that he took showing that he was a kindhearted person that just wanted peace for all. Konan-She dies trying to protect Nagato's eyes showing that till the end she was trying to help her friends and save others Kisame-He dies protecting information that'd he would be forced to give up showing how loyal and trustworthy he could be. Obito-He died helping the next generation trying to redeem himself despite his actions this like Nagato and Konan shows that he was a kindhearted person at heart and is now back on the right path.
Kakazu death was cool because the rasengshuriken of course, but was also kinda lame because how plot induced it was. It’s like they really just wanted to end him off at that point.

The fact that he explained the canabolism of sharks and chose to be eaten by sharks shows that he was like a shark, not accepted himself as a human being. This adds to his unchanging demeanor as a character.

I've been thinking about it: When Kisame gave Itachi that fact about the shark's fratricide, especially within the mother shark, he was likely alluding to his perception of why Itachi slaughtered the Uchiha clan: that quench and thirst for bloodlust, power growth and survival till there is no one left. Sometimes I think we’re misinterpreting what Kisame is saying. We think he’s saying “I wasn’t a worthless human being after all”, referencing he had worth as a human contrary to what he or others thought about him. But after watching the flashback, he used a shark analogy to describe his nature. I think he was saying “I wasn’t a worthless human being after all”, undermining what it truly means to be human. He called human beings worthless. He then disassociated with them. He truly believed he was a shark.
What could have been a better ending for Kisame. During the war, he meets Edo Itachi after Itachi breaks out of the Edo Tensei control from Kabuto. They have a talk and Kisame reminds him of the talk they had in the past about ending up as each other's final opponents. Kisame now points out that they are now on opposite sides and there's nothing to hold him back, he begins to fight Edo Itachi and a fight erupts. Eventually, Itachi manages to edge out Kisame and Kisame tells Itachi to kill him. Itachi doesn't do so and lets Kisame chose his own fate. Kisame choses again, but says that he has nothing, that his actions don't deserve another chance and then he tells Itachi to do the honors, or he'll just commit suicide himself. Itachi concurs with Kisame's decision and ends his partner's life, giving Kisame closure.

Sometimes I think we’re misinterpreting what Kisame is saying. We think he’s saying “I wasn’t a worthless human being after all”, referencing he had worth as a human contrary to what he or others thought about him. But after watching the flashback, he used a shark analogy to describe his nature. I think he was saying “I wasn’t a worthless human being after all”, undermining what it truly means to be human. He called human beings worthless. He then disassociated with them. He truly believed he was a shark.

What could have been a better ending for Kisame. During the war, he meets Edo Itachi after Itachi breaks out of the Edo Tensei control from Kabuto. They have a talk and Kisame reminds him of the talk they had in the past about ending up as each other's final opponents. Kisame now points out that they are now on opposite sides and there's nothing to hold him back, he begins to fight Edo Itachi and a fight erupts. Eventually, Itachi manages to edge out Kisame and Kisame tells Itachi to kill him. Itachi doesn't do so and lets Kisame chose his own fate. Kisame choses again, but says that he has nothing, that his actions don't deserve another chance and then he tells Itachi to do the honors, or he'll just commit suicide himself. Itachi concurs with Kisame's decision and ends his partner's life, giving Kisame closure.
