Im guessing he is straightening the blade by sandwiching it between the planks. After quenching(is this the word in english??) the blade sometimes likes to curve. He has done this with every blade he has worked with

Yep after the quench it's to keep it straight.
He didnt show quenching on this blade.. he put it in the wood still very hot.. maybe a type of stress relieving annealing?
