Interested to know what grease to you like to use?

Anything thick would be good so as to help repel moisture and water for general assembly.
Some good brands include Park Tool, Morgan Blue, Finish Line and Shimano Premium grease.

What’s the final weight? Is the hub sound very silent in real life?

Zipp hubs are completely silent. There is a magnet detaching the free hub when rolling. Pedestrians do not hear you coming.
