WTF Is Botanical Rum? Lets Make It!

  • Have you ever heard of botanical rum? Its really just a spiced rum using a distinctly different technique to impart the spice and/or herb flavours. I would suggest you likely want to target a different flavour profile . . . but that's up to you!

    Final Recipe

    I have changed this ever so slightly from the second recipe I made based on what it tasted like after blending. This would be my suggestion. It should also scale up. Just be aware you may need to do some tweaking. I actually do think the allspice was adding something interesting. so I added that back in at 1/2.
    500ml / 17 oz ester forward rum
    250ml / 8.5 oz molasses forward rum
    4g / 0.141 oz cacao nibs
    1/3rd cracked whole nutmeg
    1 allspice berry cracked
    5g 0.176 oz liquorice root
    1/3rd star anise pod
    1 slice ginger
    4g / 0.141 oz dried orange peel
    5g / 0.176 oz juniper berries (do not crack them)

    I was at a rum festival last night and had a botanical rum there. Askival rum, the botanicals the blender mentioned were smoked kelp seaweed, spruce tips and meadowsweet. I must admit, it was a surprise how good it was. The smoked kelp really came through, giving it a salty sea water flavour with the smoke in the background. It was really nice. And I would highly recommend it

      I think salty notes are underrated in many spirits, they really help to allow flavors to open up in my opinion

    The thing about allspice berries, you need to have them steep for a while if you put them in whole. You’re best off cracking them like black pepper or giving them more time to steep.
    They are used to make jerk bbq, like chicken. Nice flavor. I think it would work.

    Spirited Union Distillery in Amsterdam does a quick workshop distilling botanical rum in just two hours. The way they do it is you distill ~200ml of rum with all your chosen botanicals, then add the distillate to 500 ml of regular rum to make a full bottle. Seems like a way to keep the character of a well-aged rum intact while adding botanical elements, if you so wish.

    I use my rum feints as the base for my gin. I run them through the still to clean them up, and then do my maceration and distillation. I think it makes for a great spirit and helps me recapture product that might otherwise be going to waste.

      Absolutely we reuse all of our feints until we get 20 gallons at 140ish then dilute and run through 5 plates. I can typically pull 6 gallons at 95 in a few hours and then we triple carbon filter. Great stuff.
      Then I make all sorts of flavored stuff with that

    You have now convinced me mate, to add an Air Still to my equipment, I got a Jin basket to add in my collum a few weeks ago, but I could play with the air still to work out the tastes in smaller amounts till I get what I like & my friends, before doing a larger run. Good video.

    We make this in the Caribbean all the time. My grandmother had a recipe which she hasn't yet passed to me. the recipe differs fro island to island and family to family.

    Botanical means "obtained from a plant". To my best knowledge, rum was originally (and still is) made from sugar cane. Sugar cane is a plant. Hence rum is botanical already.

    Jesse, you may find this interesting. Conveniently there was a history of post-ban Absinthe made in Haiti, Cuba, and Various parts of South America using rum as a base spirit. I don't know of anyone doing it now but I think it could be an interesting experiment to play with. I'll be uploading a short "Amethyst" absinthe video to my One Piece At a Time Distilling Institute later today.

    I'm having a hard time imagining the juniper berries playing nicely with everything else, but maybe that's because I'm used to them being so flavor-forward in gin. Certainly willing to give it a shot, tho.

      Agreed. Out of all of the gin spices, that was what I was sure he would dump. Cardamom sounds good, and coriander sounds especially good! But hey, maybe Jeesie could try them in round two?

    Hey Jesse, interesting you call this a botanical rum. I do a spiced rum often. I make a molasses rum which I oak for only 4 to 6 weeks on Medium+ American oak, as well as charred French oak and some ex-bourbon chips.
    This produces an already great rum, but then I spice it lightly using vanilla, allspice, cinnamon, orange peel, cloves, black pepper and aniseed. I also add blackstrap molasses here, about a tablespoon full for every 3 litres of 65% spirit (which is where I oak and spice it at).
    I then filter it through a coffee filter and proof it down to 43% in the bottle. It is fantastic, not a common spiced rum and I would love to see how juniper plays a role in it. Thanks for the idea!

    I've been getting ads for a commercial Boukman botanical rum recently! It's billed as Haitian so it's made with a French Caribbean style rhum agricole. I was excited thinking you were going to try to emulate that when I saw the video.

    I know the video is so old but I’m just getting into the distilling craft and have been heavily Rum influenced to begin. However I think I would be more of a Gin kinda guy based on general preferences. I think this is what I must do going forward. Gin influenced botanical Rum is what I want going forward. Thank you.

    I am gonna try: Caramelized banana, Kakao nips, Cinnamon, vanilla, dried plums, bitter almond or cherry wine. And them add a bit of sugar to mellow it a bit

    I have a video reqest/idea if I could! I noticed you use the air still a lot, I just got one too! They're awesome! But I've noticed you doing things a bit differently to the default recipe that they recommend, and there's a few weird things they say (i.e. no cuts required). I was wondering if you'd do a video for just a standard wash and distillation using the air still. Which yeast to use, temperature/timeframe, then cuts coming off the still and filtration etc.
    Either way keep up the good work!

    I actualy made a 'root beer' mead with the original ingredients and then added rum. it was amazing. I actually want to distill a botanical rum with the root beer ingredients.

    I was thinking about doing this but decided I love my rum too much to toss juniper in there so I've decided instead to do a botanical apple brandy which I've gotten excited about. Once I eventually get around to running my apple brandy.

    An entire orange, a small handful of medium roasted coffee beans and a vanilla pod has been tried before and works wonders on a cheap, dark rum along with a good amount of cane sugar.
    But adding the liquorice root and the nibs one might avoid the added sugar and still get a beautifully sweet, dark rum with a complex taste. 🤔

    Seeing what a Mai Tai throws in it'd be curious what some almonds (does that count as a spice?) and some lime peels would do. I'd do it additional to the orange though, I think that orange curacao is important in that drink and lime alone wouldn't work. Other than that... maybe some bitter orange peels instead of the normal ones... hmmm... honestly I'd be curious what sea-buckthorn would do... maybe some mint?

    Snap! Am making a blackstrap rum right now, with cacao nibs, vanilla pod, coffee beans and a cuban cigar cut into 1" sections and added to the botanical basket. All other ingredients macerated. Tastes fantastic in a Daiquiri.

      Can you describe the flavors and aroma’s you are getting from the cigar? There is a plant called a flowering tobacco too. I haven’t been around one un many years, and they are used for the blooms, not the foliage, as a decoration, but i would be curious on the uses of the flower in this sort of application like with hibiscus or roses.

    Did this with cardamom, nutmeg bourbon vanilla beans, ginger, clove , lemon and orange zest,and some star anise, and aged in a glass carboy , we used a hundreds of years old recipe. This should probably not be consumed in volume. The "botanicals" do "something"

    Thanks for the idea. I've got 3l of rum I made and didn't like the result. I've even redistilled it and although better I can't see me drinking it. So it's out with the gin botanicals and back in the still with it.

    There is a electric distiller on the local website for selling stuff and it looks just like yours but it has a digital temperature control on the side. They call it a water distiller but I'm thinking with temp control it should be able to distill spirit correct?
    They are asking 45 bucks......
    I might grab it tomorrow even if unsure.

    Carrots are a good veg to get a decent drink (with or without ginger), although parsnips also make a good dry white wine substitute. I'd love to see what they do distilled, we can't do it in the UK due to the laws.

    My wife's favourite drink is Green Ginger Wine, I've been wondering if a botanicals maceration very heavy on ginger in a neutral made into a liqure would be doable or would too much of the ginger be lost in distillation

    From my experience you should heat up allspice a little bit on a frying pan. Some spices need temperature to start working.

    Strange, I would have went a different direction. I just don't think I'd like juniper with rum. But cardamom seems like it would have played nicely with it. Also, have you ever tried using fresh orange peel instead of dried? Most of the citrusy notes in the peel are very volatile oils that are long gone by the time the peel is bone dry.

    I just stumbled onto a new product in my area that i may have to use as an adjunct for a rum or brandy. It's a dairy free "banana milk" made with bananas and oats. there are also some flavored versions like strawberry, mango, and chocolate. I may have to double down on my strawberry banana rum recipe. (which was evaporated sugar cane as a base, closer to a rhum agricole than a molasses rum, spiked with strawberry banana body armor. I think adding the banana milk, especially the strawberry one, would give it a nice kick in the pants. )

    7:11 Allspice berries will be almost impossible to detect in the presence of star anise and licorice root.

    Can you make alcohol from only juniper berries. Not vodka where it's infused in alcohol but where you literally make a juniper berry mesh and distill it out? I'm asking that because this year I'm going to have a lot of juniper berries on my property. around 60 of my junipers are producing berries this year.

      Interesting idea! Did you try it? I would assume there has to be some sugar or starch inside the berry to feed the seedling, but how much I have no idea. It might take exogenous enzymes or from malt to convert the sugars, but…

    Hi guys, love the community here! I want to start a small alcohol business in Malta but distilling alcohol here is almost impossible due to our laws. I was hoping that someone gives me a few options where I can find a distillery in Europe that will let me distill my recipe or buy a neutral spirit (vodka)? the thought process is to distill abroad from Malta then import it to Malta.
