pumpkin chickpea cookie dough (healthy & vegan) ♡ ひよこ豆クッキー・ドー
Ingredients:
- 1 can of chickpeas, drained and rinsed
- 1/3 cup almond butter
- 1/3 cup pumpkin puree
- 2 teaspoons vanilla extract
- 3 tablespoons maple syrup
- 5 tablespoons oat flour
- 2 teaspoons pumpkin pie spice
- 1/8 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup dark chocolate chips or cocoa nibs
1. Drain and rinse chickpeas. Place onto a paper towel and dry them off.
2. Peel the chickpeas. You don’t have to peel all of them, but this will help the texture.
3. Add chickpeas, almond butter, vanilla extract, honey, oat flour, pumpkin puree, baking soda, salt, and pumpkin pie spice to a food processor. Blend until smooth and creamy.
4. Fold in the chocolate chips, and scoop the chickpea cookie dough mixture to a mason jar.
5. Place in the refrigerator to chill and enjoy!

To make the mochi: - 1/2 cup glutinous rice flour - 1 tbsp cornstarch - 1/2 tbsp sugar - 1 cup milk - 1 tbsp butter - Mix the glutinous rice flour, cornstarch, sugar milk together in a bowl and seal with plastic wrap on top.       I believe you can steam it using a stovetop as well, but I've never tried it! :(

      hi! here are some rough measurements. ingredients like sugar and the matcha powder can be adjusted to taste :) mochi: - 64 grams glutinous rice flour - 8 grams cornstarch - 6 grams sugar - 240 grams milk - 14 grams butter matcha cookies: - 188 grams all-purpose flour - 8 grams matcha green tea powder - 38 grams white sugar - 55 grams brown sugar - 43 grams coconut oil + 43 grams unsalted butter, room temperature - 1 egg - 7 grams vanilla extract - 3 grams salt - 2 grams baking soda - White and dark chocolate chips
