Pierogi with meat filling. Meat Pierogi tutorial
Pierogi with meat
Cooked?boiled Beef either neck or beef strip
if you decide to mix your meat add 2-3 chicken drumsticks or chicken thighs
all together should be about 3/4 of a pound to 1 pound
vegetables : carrots, parsnip, celery, onion
2-3 garlic cloves
2 strips of bacon -optional
salt and pepper to taste
butter
additional onion to saute and top your pierogis
Dough
500 grams of flour
2 teaspoons of salt
1 tablespoon of butter
1/3 of a cup of milk mixed with over 3/4 of a cup of water total liquid little over 1 cup. melt butter in that warm liquid mixture

I added beef cube. Beef bulion cube. That adds some flavor to it. I apologize. I forgot to mention it.

I followed the recipe exactly. I blended the dough in my stand mixer with a dough hook for 12 minutes. The dough never came together into a ball. When I put the dough on a floured surface it was extremely stiff and seemed dry. I used five egg yolks. It was not as pliable as the dough shown in the video. When I folded the dough over and beat it down, it would not stick together. I just seems like it was too dry. I used all purpose flour and weighed out 350 grams. Any suggestions?
I am sorry to hear your dough did not turn out like mine. Did you put sourcream in with butter? I have made this multiple times as my clients love this crust and didn't have any issues. Also, what kind of flour...meaning brand do you use? The reason I ask is because I had a bad experience once. The store i went to didn't have my usual flour, and I bought another brand that was organic. My dough was like a playdoug, so my children ended up playing with it. Like clay... I tossed this flour to garbage. I usually use KA or Trader Joe's or a Polish type flour . I do not use any other type I do not know ever since that accident.
@@Sabinaspolishinspiredkitchen Thank you for your prompt reply. Yes, I used the sour cream. I followed the recipe exactly. I don't know what flour I used; I store it in an air tight container. It was one of the popular brands you normally see on the grocer's shelf. Your description of playdough is exactly what I had. I will look for the brands you suggested. I might try a cake flour with less gluten.
Note; .**May be less if you are using flour that absorbs wet ingredients fast. Type of flour does matter here. When I use Polish flour I put 15 grams more. All purpose flour from Trader Joe requires less , about 325 grams. You might want to experiment with your flour first time you are making those, and leave some flour on the bottom instead of putting all in at once. You can dust your dough on the end with it. Many people have trouble making those because it is very “ sensitive “ to the type of flour one uses. And weight your sour cream to make sure it is the right amount. I wish I could video call so we can make it together. I made those yesterday for my mom. Exactly the same recipe. I may suggest start mixing all the wet ingredients first. all wet items in and add half of the flour first, than slowly add half of what is left. once mixed turn off the mixer and check with your hands. Feel the dough. if it is more on a moist side sprinkle some more. if the dough is solid but stretchy and medium soft do not add anymore. whatever four is left use for dusting. I hope this will help!!

Yes! Lol And one more thing...speed of a mixer. I have 10 levels of speed and I used level 2, not more. Beating eggs is one thing but this dough needs to be manipulated at slower level

Hello from Vancouver Canada! Your tutorial is excellent however I’m confused because one version says to use two egg yolks and this one says to use one. Should I I use two or one for a dough that’s easy to roll out? I absolutely love your idea of not having to re roll dough by using irregular shapes.

Sometimes I go with one egg yolk.Sometimes I go with 2 egg yolks.That's the little detail i forgot to add. There's nothing else to it. If you have time, check kolaczki cookies. They are very tasty. These are ambrosia. My Slovak grandma never used sour cream in the dough, but MOST Polish doughs call for that. This is the dough she used to make, she kept re-rolling the scraps until she was done, but I like how you cut the squares. Then boiled and sautéed with butter and onions, God help me. Heaven. A little sour cream on the fried pierogis does hurt either. Thanks

@M63Tod i do not 99% of thr time. This dough is so soft and easy to work with and shape i do not even think about using water. My mom sometimes does when she makes her pierogis. Do what works for you. Try it out and see what is better. Thank you for watching

I usually have little more 275ml just in case. Every flour is a bit different and soaks liquid more or less. It should have said: 1 pound of flour 250 ml liquid. It should be enough for 50 pierogis. I apologize again for my mistake. Dough 1 pound of all purpose flour 1/2 teaspoon salt 2 egg yolks 1/2 a cup warm water mixed with 1/2 a cup warm whole milk around 250 ml of liquid. I like to have a bit extra in case flour is absorbing more. 1.5 tablespoons of melted butter

1 pound is about 4 cups. Just remember to swif the flour so it is light. If your flour is condensed, you will have too much. That will result in harder dough. I am sorry for my mistake . Hope you will enjoy making those pierogis.

I tried this dough as an experiment since my usual dough recipe can be finicky. This dough is a delight to work with--many thanks for sharing it with all of us. I like getting away from seed oils which many recipes call for. I used Pillsbury All Purpose Flour which worked well & mixed in a large bowl instead of a board. I was surprised when you mentioned that different brands of flour can be problematic---good to know! 😃This video has made me excited to make pierogi again. I always dreaded the dough part & resorted to store-bought many times. No more.

Not yet! I am not a big fan of herring, so I am not in a hurry to do it lol.
Simplest For about 6-7 herring filets about 700 grams about 1.5 pounds, you need 500 ml water about 2 cups 150 ml vinegar 10% Carrot cut into slices Onion sliced 2 teaspoons of sugar 2 large bay leaves 3 grains of allspice 1 teaspoon of mustard seeds. You can also add a couple of seeds of back pepper. Water spices Carrot bring to boil on low for 4-5 min. Remove from burner add onion. stir and let it cool off. Put herring into 2 jars and spices with veggies than pour your brine over to cover completely . Close Tight and well ,put into fridge. About 5 days those are good to try.

Ofcourse. From.this recipe you will have about 50 pierogis depending how big or small you make them. But yes you can make half.
I made Pierogies last week and didn’t have all purpose flour so I used bread flour and they looked perfectly shaped and held together well to my surprise. Then a few days ago I use all purpose and they break open but I didn’t boil long. What gives?I will try your method next batch. Ty for sharing
@Flowergrl69 bread flour has more protein which gives a chewier texture . All.purpose is lighter. I have never used bread flour for pierogis so I cannot really tell you why this happened. I usually take pierogis out from boiling water into ice water. This helps lock the dough and I almost never have any opened pierogis. And I like them next day best when I pan sear to crispiness. NOT a coffee cake! Please don't call it a coffee cake unless it actually contains coffee! It's a frustrating American thing to call any cake a "coffee cake" on the grounds that you can have it with coffee. It makes it almost impossible to find a recipe for genuine coffee cake that tastes of coffee.
I apologize that the name upset you. Most people from here taught me that this is general usage. Took the "coffee" word out of the title for you. Good luck with your search of finding actual coffee cake with actual coffee in it. I have posted coffee cookies with coffee in them. I love the flavor of coffee and those cookies are my fav. Cheers!
