    I always get my ingredients done the day before... I scoop my Cheddar//Onion with a melon ball scoop,,I line these on a cookie sheet lined with parchment,, The dough @ potato sit overnight, ,,, Next day FAST @ Easy to roll

    Hi Sabina, I just found your channel and can’t wait to try your recipes. I once asked a friends mother to stop and buy an enormous head of cabbage I saw at a neighborhood market, I promised her my mom would pay her back when we got home. The very next day my mom and I spent the afternoon making a huge roaster full of golabki. I think it was the best batch we ever made. We had freezer meals for months. The addition of seasoning to the simmering water is new to me as is the mushrooms in the filling. It makes total sense to me and I’m cooking for myself unless I decide to share. I will be sure to tell you about my results. I’m also deciding on which one of your morning dishes to make to share with my neighbors while I’m on vacation next week. Friends, warm baked goods and a hot drink is a great start to my day.

      I am so glad you like it! We also.amke golabki on Christmas Eve but without meat. Just rice and mushrooms. It's traditional no meat on Christmas Eve. I love those. Sometimes we make it with mushroom sauce but I prefer the tomato sauce. I hope you will enjoy whatever you chose to make. Cheers!

    If you make the pierogies the day before and just warm them up. How do you keep them from sticking together if the dough is really soft?

      Right when I am done boiling them, I take them out to ice water. That way, they don't stick. Put them in the strainer next. Once they're dried, i add melted butter. I have them for 2 days as leftovers and never have an issue with sticking For me, best pierogis are next day from a pan when crispy.

      Dough 1 pound of all purpose flour 1/2 teaspoon salt 2 egg yolks 1/2 a cup warm water mixed with 1/3 a cup warm whole milk around 250 ml of liquid. I like to have a bit extra in case flour is absorbing more. And about 1 to 1.5 tablespoons of melted butter

      Yes, correct. This one is all purpose from Trader Joes. Those4 are so crispy and delicate, just melt in your mouth.

    We just finished eating the most delicious pierogi we've had in our lives. I can't believe how easy they were to make - the dough and the fantastic technique of making them was an absolute game changer. I made pierogi before, but they tasted kinda meh (worse than that actually). I always wondered how other people were able to make such delicious pierogi when mine were barely eatable. I'm not a bad cook, but I just couldn't master pierogi, and I gave up trying years ago. Yesterday, after watching your video, I decided to have another go. I cannot believe what I've created 😁 They were so quick and easy to make, so enjoyable to make, and due to the fact that I was able to season the filling to our taste, these were genuinely the best pierogi we've ever had.       I usually use 2 pockets of 7.5 oz of famers cheese. I big tablespoon of cheese spread on one pastry. if there is any leftover it takes a second to eat it plain lol....it is like cheesecake! Polish name is Drozdzowki z serem. Cheers!

I think I remember she made a pre-ferment for the dough, claiming it gave the dough more flavor. Have you ever done the pre-ferment process? Can you advise that process? Thank you.

      Hi. Wonderful your grandma was a professional baker! I can imagine the smell of her house! I only do it for pizza and sourdough bread. I have my sourdough starter that I use for any bread & rolls & pizza. But that's the only time I use it. There are few types of pre-ferment Biga: I do not do it. Poolish: I use for pizza dough Levin: sometimes in bread. Lack of time is simply the reason I do not do it much.

Obesity is not an issue now, and I still love great tasting food. If I wanted to try a Poolish for this recipe (mix yeast, milk, 1 tbs sugar, and 1 tbs of flour), how long do you think I should let it ferment, and does the pre-ferment need to be refrigerated?       @KJ_nyc I have never done it with this recipe, but I have done it with pizza and bread dough My favorite poolish is to start in the afternoon , let it get all active and bubbly , and then put it in the fridge overnight. Next morning, take it out and leave it in a warm place so it comes back to life in toom temp and make my bread or pizza. I won't be much help with sweet recipes here if it comes to prefermenting. My grandma or auntie never done it. They baked a lot of sweet goodies but never pre-ferment or baked bread. I actually bake breads for my mom when she visits. She takes those home with her to freeze. She lives about 4-5 hours away from us. Tried to give her sourdough starter a few times, but she could not maintain it. So, at least I can make her happy once in a while, baking goodies as a gift. If you try to pre-ferment this dough, let me know how it turned out please. Thank you

      I am sorry it didn't work. I never put sour cream in pierogis dough. In cakes, yes, but not pierogis. Do not have any experience with sour cream. I truly hope this recipe will put a smile on your face. Cheers

    Yes, yes. Pierogi dough with milk, butter, and egg yolks, is much tastier than the one with only water and oil. I made pierogi Ruskie yesterday and the dough was easy to work with and delicious. Than you, Miss Sabina for this wonderful recipe! Ela z Ohio.

      yes. I do beforehand . its not shown in the video. And yes you can reduce the sugar in crumble. I customize recipes all the time. Cheers

      Ok, in my video, it was slip of the tongue. 250 was for liquid (milk with water) 250ml. Not for the flour. 1 pound of flour 250 ml liquid. It should be enough for 50 pierogis. If you want 25 pierogis, divide the recipe in half. Thank you again for catching this mistake. I appreciate it. Thank you.

      1/2 a cup warm water mixed with 1/2 cup warm whole milk. I mix flour with a mixture of half water with half whole milk. 1.5 tablespoons of melted butter

    Do you have a recipe for meat pierogi? That is my favorite. I can tell just from watching your tutorial on pierogi dough that they will taste delicious. And the fact that you don't waste the dough I can also tell you are an accomplished cook. tfs

      thank you! I do not like wasting food, I have great respect for food and people who have little. it’s a blessing when yo do not have to worry about putting a good meal on your table. I did not record meat pierogis yet. I usually use meat from a soup I make. All my soups from scratch using chicken meat and piece of beef. When I mix my meat the broth is so much better. And that leftover meat plus all the veggies from that broth all go into my meat pierogis. Once I blend the meat I sauté sweet onion with butter not oil. some garlic salt and pepper and the filling is done. hope this helps.

      @@Sabinaspolishinspiredkitchen Thank you! I figured it would be leftover meat from making something else. I thought I would be able to use leftover pot roast meat and just grind it fine. I've seen some that use hamburger and that does not sound good at all.
