UP’N SMOKE- All About BBQ
เข้าร่วมเมื่อ 15 มี.ค. 2022
Welcome to my adventures in BBQ! My name is Becky Allums. Over the last several years, I've learned good BBQ can be made on any type of grill. It doesn't require a large, dedicated smoker. This is the place for exploring new ideas for smoking on a kettle grill.
We'll have grilling and other cooking videos, as well as product reviews.

Bacon & Cheese Wrapped Kiolbassas (kielbasa)- Camp Chef Woodwind Pro 36
A fun twist on Kiolbassas (kielbasa). Wrapped them up in a slice of cheese and a slice of bacon. Grilled them on the Camp Chef around 425 for 20-25 minutes or just until the bacon gets crispy. Super easy and super delicious!

Smoked Pork Belly Bites on the Camp Chef Woodwind Pro 36!!
มุมมอง 450ปีที่แล้ว
These bites are similar to SPAM bites, but taste more like bacon. Smoked them on the Camp Chef Woodwind Pro 36 and they are delicious! Also used a Maple Ginger glaze. Great appetizer for a party! Traditional Meatloaf on The Camp Chef

Smoked a "regular" meatloaf using breadcrumbs instead of cheese (see Cheeseburger Meatloaf video). The Canp Chef performed beautifully. Really loving this grill! Rib Series Part 3 of 3: Wrapped vs Unwrapped Plus, I try out my new Camp Chef Woodwind Pro 36

We compare wrapping ribs during cooking against not wrapping. Interesting results. Plus, I've added a new grill to the patio, a Camp Chef Woodwind Pro 36. This is my first cook on it. Check it out! What's y'all's take on ribs. Tell me your preference in the comments- wrapped, or unwrapped? MERCH MERCH MERCH Like the T-Shirts & Aprons that I wear in the videos?? No Wrap Beef Ribs (Wagyu!!)
มุมมอง 89ปีที่แล้ว
Slow cooked some easy, no wrap Wagyu beef ribs. I haven't really been a fan of beef ribs in the past, but these came out great! Used a little Head Country BBQ sauce on them and cooked them around 225 degrees. Delicious! MERCH MERCH MERCH Like the T-Shirts & Aprons that I wear in the videos?? Snowpocalypse Chili on the Kamado
มุมมอง 51ปีที่แล้ว
Chili made on the kamado. First tried this during the power outages of 2021 when Snowpocalypse hit Texas and the rest of the southern United States. Originally, this was as much about survival as grilling, but it is a great way to make chili. Delicious recipe, especially on cold days, whether your power is on or not. Grilled Appetizer Pizza
มุมมอง 48ปีที่แล้ว
If you love softened brie with jam or jelly for a party appetizer, you'll love this pizza. Drizzle a little olive oil over a plain pizza crust, then put on some sliced brie and spoon on some hot pepper jelly. Grill for 12-15 minutes, depending on your crust. I recommend taking the brie block out of the fridge about 15 minutes ahead of time. It will be easier to slice. Let the pizza cool a bit a...
Smoked and Braised Chuck Roast
มุมมอง 207ปีที่แล้ว
This is a delicious way to cook up a tasty roast. I smoked it on the SnS kettle grill for a couple of hours and then moved it to a pan along with some carrots and potatoes. Poured in some broth about half way up the roast. Cooked it up to 205 degrees. It makes a delicious one pan dinner.
Smoked Cream Cheese
มุมมอง 76ปีที่แล้ว
Smoked cream cheese finished with fig butter makes a great appetizer or dessert. Cream cheese can also be made with a rub or other seasonings for a savory appetizer. It only takes about an hour to an hour and a half to get nice smokiness on the cheese. MERCH MERCH MERCH Like the T-Shirts & Aprons that I wear in the videos?? Smoked Spatchcocked Turkey
มุมมอง 1582 ปีที่แล้ว
Smoked turkey is pretty easy and takes less time when it is spatchcocked first. Basically, we're just cutting out the spine and then breaking the breast bone to flatten it a bit. I don't have the wrist strength I once had, so my Favorite Taster, husband and Superman comes in to help. Cooked this up on my SnS kettle grill. If you like turkey, you'll love it smoked! Twice Smoked Maple Glazed Ham
มุมมอง 1122 ปีที่แล้ว
This is a fully cooked, spiral sliced ham. I picked up this hickory smoked ham at H-E-B and put it on my SnS kettle grill. Used some hickory chunks and a little bit of pecan chips to help add more smokiness to this ham. Then, I made a maple syrup-Dijon mustard glaze. Poured that on, wrapped it up and put it back on the grill for a bit. Super easy and very delicious for a holiday meal. MERCH MER...

Chilled Pasta Salad! Awesome BBQ Side Dish
Sent back a 4 probe meater block and purchased a smoke X 4, have never looked back…. These things are GREAT. Don’t hesitate to buy one if your on the fence!
Great video, thank you i just got a old smokey.
Great video. Thanks
Great video. Im going to get me that kinda grill
Can’t go wrong with the peta shirt , good grilling
Hope to get an Old Smokey !!
What was the outcome?
Can I get a Peta shirt love it 😂
How's the taste of the flavor one
I love cooking on my old smokey. You where doing great until body by brisket came home.
Order the Billows for my Weber Smokey Mountain
Will this work on an offset?
How long did that have to cook? I know u said it was 240 degrees for a bit. I just bought some long legs for the ol smokey, about to cook one a little bigger then that one in a few days.
Does the slow n sear basket go on the same side as the smoke hole or the opposite side of the grill when using the Billows? Thanks!!
Despite i know the sns 1 inch smoke hole should fit the billow but i was searching for a video to be 100 % sure before buying the device and by any chance it doesn’t work .. thanks for the video 😊
Hi Becky! Just got my old smoky delivered yesterday. Put it together this morning and I am now doing a burn in. I came across your video while searching for old Smokey videos. I must say you did an excellent job on that brisket. Trying to decide my first cook on it. I just might do that or a chuck roast. Thank you so much for sharing. I really love your content. I liked and subbed to your channel! Wishing you the best on your channel. Cheers from Dave over at Dabomb Smokes.😎🤘
Thank you so much for the kind words. The Old Smokey is really great for anything. Even pizza. Unfortunately, it has been so hot down here in South Texas that I haven't been spending much time outside, much less next to a hot grill. Thank you for watching and subscribing! Enjoy your Old Smokey!
I love Old Smokey Grills. The pizza looked fantastic. What was that word you used to describe the lid that was askew?
The pizza on the Old Smokey is awesome. The word was "whomperjawed". I got it from my dad who was from Oklahoma. So its probably an Okie expression. LOL Thank you so much for watching. I've seen some of your videos and they're great!
What about for whole briskets? I want to send one to my mom in another state.
I have used the vacuum sealer for some large food items and you just need to make sure you make the vacuum bag large enough. Let me know how the shipping process works out. Thank you for watching!
Would like to hear temps that you used.
For meatloaf, I have the grill at 250 degrees. The meatloaf is done when the internal meat temp is 160 Thank you for watching!
You really need an unbiased taster!!!! Just sayin!!!
LOL! One of these days...
Love the PETA T-shirt!😂 Pulling my pork belly out of the freezer now, can’t wait try this recipe. Thanks 👏
You can buy the PETA logo on shirts or aprons in my store!! www.PeopleEatingTastyAnimals.com (copy/paste link)
No Beans and No Water. Now THAT'S CHILI. ❤
- First off, congratulations on the new grill. - I am firmly in the corner of "No Wrap". However I will admit though not ribs the best brisket I have ever done was wrapped in butcher paper. - I have yet to get into the pellet grill game but do see one in my future. - "Grate-Estate" is a great thing. Kind of like closets, you never have enough of them/it. My largest cooker area wise is my Hastybake Gourmet. I can load that grill up and darn near can feed the neighborhood. - Another great video and once again congrats on the new addition to the herd.
Thank you so much! I was on the fence for a long time about getting a pellet grill. However, the smoke box feature on this one really sold me. As I get used to it, I can see it really adding extra smoke flavor. I definitely used to be in the "No Wrap" camp myself. Both racks were nice and tender, but the wrapped rack practically fell right off the bone as soon as I picked it up. Thank you for watching!
Pronounced... Fa he ta
Very helpful intro to the Bartesian. We love ours. BTW -- Tanqueray Gin and the Bartesian Uptown Rocks pods are EXCELLENT!!
I love Old Smokey Grills.
I love the Old Smokey too and I'm a fan of your channel! Thank you so much for watching!
Becky, - Enjoyed the video. - I used to wave off on beef ribs because in my neck of the woods they were very poor qualit. - Last couple of years I have been able to get "Beef Chuck Short Ribs" which consist of 4 large bones. They are good have a tad of roast flavor. Also able to get "Beef Plate Ribs" 3 huuge bones (dino ribs) or "Brisket on a Stick". The latter are so good they may supplant my love of any and all pork ribs. - Keep up the great work waiting for the next video.
We haven't tried dino ribs yet. I haven't spent a lot of time on beef ribs because whenever I had them, they always seemed on the dry side. These Wagyu were very moist and delicious! Thank you so much for watching!
Gonna be smoking one right now on the ol smokey
I like you! Best YT views provider -> 'Promo SM'!!
Nice job! I always smoke hot and fast.
I like it "FTA" (Favorite Taster Approved).
Brisket exeriments are always fun to watch!
Thank you!
Great idea! Didnt know what is hot pepper jelly. Gotta try
It is really tasty! Thanks for watching.
The have a new therma pop with a bigger screen I’m looking at.
Awesome video. I was on the fence about the slow n sear kettle. But seeing it has all the ports for the billows and smoke x. I think I’m ready to pull the trigger. Internet favorite Weber is the 26. It’s my go to for big cooks like whole brisket or ham and turkey.
Thank you for watching! Hope you enjoy your Slow N Sear kettle!
Great idea, I'd add the broth in boiling so it could braise and reduce to intensify the flavor
Thank you
Thank You
Looks yummy but I still believe you need a unbiased taster!!!!
Soon.
If you will cut the breast bone first then the turkey will be easier to push down to lay flat.
making brisket on a 70$ grill! Thats amazing!
This one was in the $55 range. It was the 18 inch one. But, yes! Proves that you do not have to have a multi-thousand dollar smoker. Thank you for watching!
Saw you on fb....hubby saying good things bout you
Awesome! Thank you so very much!!
Is that an 18” olsmokey , nice that the brisket fit on there , good video thanks for sharing
Yep! It is an 18" Old Smokey. This particular brisket in the video was a smaller grass-fed brisket, not a packer style brisket. Thank you so much for watching!!
So did putting it on the grill add some smokey flavor to the beans?
Definitely! Give it a try!
@@UPNSMOKEAllAboutBBQ Sure will. Getn my Old Smokey in few days.
- Becky your T-shirt today was awesome. - The "Taster's" low and outside pitch of no salt on initial tadte test knocked me for a loop. - Was impressed you had no flareup when you turned the skewers on the Old Smokey. - Great cook. I am going to pass the video to my nephew. The folks up in Mass inhale steak tips and am sure he will try this.
Another great recipe! Thks for how much time and temp! Be getting my old smokey grill in about a week.
250 degrees. Typically takes about 3 hours. I start checking the internal temp around the 2 to 2 and a half hour mark. This also works great with an old fashioned meatloaf recipe using cracker crumbs. Thank you so much for watching! Enjoy your Old Smokey!
@@UPNSMOKEAllAboutBBQ Thks so much! And thks for the reply!
Your camera angles and presentation are top notch! Now I will get a Old Smokey. Don't know what size.
Thank you so much for the compliment! Glad you enjoyed the video. The Old Smokey is a great little grill! I have the 18 inch, but I think the 22 inch would be a great purchase if you're regularly cooking for a lot of people. The 18 can get a little tight when I'm trying to put a lot of food on at once. Happy grilling!
@@UPNSMOKEAllAboutBBQ Thks! Just me a friend or two. On tight budget, will get 14" Cant believe Ace Hardware is cheaper than Wally world
Nice and easy recipe. What size is your Old Smokey?
Mine is an 18 inch. Sometimes, when I've been cooking a lot of food, I kind of wish I'd bought the larger size. LOL
Thank you
Wonderful Thank you
