if you noticed the way most of those suit of armor fell you can see the way the extras that fell were actors in the suits, the suits with the actors try catching their fall.
Nobody gives Mel Brooks enough MAD PROPS for such AMAZING fight scenes and special FX in an era of digitalisation and CGI. This dude was a REVOLUTIONARY.

Not all of them. You can see a few who are actual people
Some are mannequins, mostly on stairs, with one or two guys at some places to correct falls and keep the domino effect as needed.
