No-Bake Energy Bites Recipe
These no-bake energy bites are packed with the goodness of walnuts, almonds, and dates, rolled in coconut or toasted sesame seeds for a delicious and nutritious snack. Perfect for a quick energy boost!
Ingredients:
1 cup walnuts
1 cup almonds (sliced or whole)
7-8 dates (pitted)
sesame seeds (for rolling)
shredded coconut (for rolling)
Instructions:
1. Prepare Dates: For dry dates, soak them in warm water for 10 minutes. Drain and pat them dry with a towel.
2. Process Nuts: In a food processor or blender, pulse the walnuts and almonds until they form small pieces, but not too fine.
3. Add Dates: Add the dates to the nut mixture and pulse until everything is well combined. The mixture should hold together when pressed.
4. Form Balls: Scoop small portions of the mixture and roll them into balls using your hands.
5. Coating: Roll the energy balls in shredded coconut or toasted sesame seeds.
6. Serve & Store: You can serve the energy balls immediately. Store them in an airtight container in the refrigerator for up to two weeks.
*Toasting Sesame Seeds:
Heat a dry pan over medium heat.
Add the sesame seeds and toss them gently in the pan.
Stir frequently to ensure even toasting for about 2-3 minutes or until the seeds turn golden and start to release a nutty aroma.
Remove from heat and allow to cool before using.

Perfect for any occasion, this roll cake is a delightful treat that’s sure to impress Roll Cake Recipe Ingredients: 5 egg yolks Pinch of salt 50g sugar 1 tsp vanilla extract 90g flour 1 tsp baking powder 50g vegetable oil 50g milk 5 egg whites + 70g sugar for meringue 2 cups heavy whipping cream 1/3 cup powdered sugar Cocoa powder for dusting Instructions: Preheat your oven to 170°C (340°F) and line a baking sheet with parchment paper. 1. In a bowl, whisk together the egg yolks, salt, 50g sugar, and vanilla extract until the mixture becomes light and foamy. Set aside. 2. In a separate bowl, beat the egg whites on medium speed until frothy. Gradually add 70g of sugar in three stages, continuing to beat until stiff, glossy peaks form. 3. Gently fold the egg yolk mixture into the beaten egg whites. 4. Sift the flour and baking powder over the mixture, then fold in using a spatula until just combined. 6. In a small bowl, mix 1 cup of the cake batter with the milk and vegetable oil, then fold this mixture back into the remaining batter until well combined. 6. Prepare the Caramelized Apples: In a pan, mix together the chopped apples, brown sugar, cinnamon, butter, and a pinch of salt. Cook over medium heat, stirring constantly, until the mixture turns a light amber color and the apples are caramelized and softened. Remove from heat and set aside. 2. Combine warm water with yeast and sugar. Mix and let it proof for about 5 minutes. Mix salt and flour, then add the yeast mixture. Stir with a spatula and knead until a dough forms. Cover with plastic wrap and let it rest for 30 minutes. 2. Transfer the dough onto a floured surface. Sprinkle flour on top if the dough is sticky. Roll the dough into a rectangle. Ingredients For the Cake: 400ml milk 40ml plain yogurt 250g sugar 120ml Oil sunflower 2 teaspoons vanilla extract 20g corn starch 2 + 1/2 teaspoon baking powder 1/4 tsp baking soda 300g all-purpose flour 1/4tsp salt Instructions: Preheat the oven to 350°F(180°C). Grease two 9-inch round cake tins with butter and line them with parchment paper. In a bowl, combine room-temperature milk, yogurt, sugar, oil, and vanilla extract. Mix until the sugar is almost dissolved. Combine and sift all the dry ingredients and mix them into liquid ingredients. Pour the cake batter equally into the prepared cake tins and bake in a preheated oven for 25-30 minutes or until firm to touch. Add cold butter (I cut the butter into small (1/2-inch) cubes and freeze for 15 minutes before using) Rub the butter into the flour using your fingertips. Your butter should become pea-sized. Add ice water, 1 Tbsp at a time, and mix between each addition. Your dough should be ready when it just begins to clump. Form the dough into a disk. Don’t overwork it; just pat it into a disk shape. Assemble the Galette: Preheat the oven to 425°F(218°C). On a floured sheet of parchment paper, roll the dough into a 12″ circle with a rolling pin. It doesn't have to be a perfect circle. Arrange the strawberries in a circular pattern over the dough working from the outside in and leaving a 2″ dough border add just one Tbsp of strawberry mixture juces and Discard excess juices , or your galette may overflow. Fold the edges of the galette up and over the strawberries, pinching the overlapping edges together to form a nice seal. Try to patch up any cracks in the dough. Brush the crust with beaten egg and sprinkle with sugar. Bake for 25-30 minutes until the crust is golden brown and the strawberry juices are syrupy. Perfectly baked and garnished with fresh onions, parsley, and lemon. Ingredients: Fish marinate: 1 Whole Rainbow Trout 1 tsp of salt 1 tsp paprika 1/2 tsp black pepper (optional) Half of a lemon juice (2 Tbsp) 2-3 Tbsp vegetable oil Stuffing: 1 cup walnut, finely ground 1 medium onion, finely chopped 4 garlic cloves, finely chopped 1/4 cup parsley, finely chopped 1/4 cup coriander, finely chopped 2-3 Tbsp pomegranate molasses (optional) 1/2 tsp turmeric 1/2 tsp black pepper 1/2 tsp paprika 1/2 tsp salt Garnish: Red onion, parsley, lemon juice 5-6 fresh mint leaves to garnish Instructions: 1. Clean the fish by removing the scales, fins, and bones, then rinse the fish under cool water and pat it dry with paper towels. 2. Using a sharp knife, make diagonal slits across the fish, spacing them about 1-2 inches apart. Cut through the skin and slightly into the flesh, Make sure not to cut all the way through the skin to avoid making holes Repeat this on both sides of the fish 3. Season the outside and inside of the fish with salt, paprika, pepper, and lemon juice and set it aside. 4. In a pan, cook the chopped onion until soft and translucent. Add the seasoning and chopped garlic and cook for another 1-2 minutes. Add ground walnuts lemon juice and mix. Add pomegranate molasses and mic well for a couple of minutes. stir in the chopped parsley and coriander, Cook for an additional minute, then remove the pan from the heat and set aside to cool. Stuff the fish with the mixture, then secure it with twine to keep the filling in place. 5. Brush oil on both sides of the fish. Warm the milk in the microwave for about 20-30 seconds. Add the sugar and yeast to the warm milk, then stir to combine. Add the flour and mix until a cohesive dough forms and no dry flour remains. 2. Place the softened butter on top of the dough. Knead the butter into the dough in the bowl or on a work surface by hand. Initially, the butter will be messy, but continue kneading until it fully incorporates. ( continue kneading the dough until it is smooth and no longer sticky, approximately 5-10 minutes.) 3. Gluten Window Test: Stretch a small piece of dough gently. If it becomes slightly translucent without tearing, it’s ready. 4. Cover the bowl with plastic wrap and let the dough rise until doubled in size, about 60 minutes. 6. Once proofed, divide the dough into 6 or 8 equal portions. Shape each piece into a tight ball with your hands and place it on a baking tray lined with parchment paper. 7. In a bowl, sift together the flour, baking powder, and salt. Set aside. In a small bowl, mix the blueberries with 1 tsp oil and then 1-2 tbsps of flour until the blueberries are coated. Set aside. In a separate bowl, cream together the butter and sugar until light and fluffy, about 3 to 5 minutes. Beat in the eggs, lemon juice & zest. Add milk, then fold in the dry mixture until just combined. once the batter comes together, scrape the sides of the bowl. Fold in the blueberries. Blueberry Rolls Ingredients: For The Dough 450g all-purpose flour 120g unsalted butter, room temperature 3 Tbsp sugar 1 Tbsp instant dry yeast Pinch of salt For Blueberry Filling 2 cups fresh or frozen blueberries 3 Tbsp maple syrup or powdered sugar, adjust to taste 2 Tbsp corn starch 1 tsp vanilla extract, optional Instructions: 1. Add all the dough ingredients to a large bowl or stand mixer and mix until it comes together. Knead the mixture for at least 5 minutes until it forms a smooth and stretchy dough. 2. Cover the bowl with plastic wrap. Set it aside in a warm place for at least 1 hour or until the dough has doubled in size. 3. Preparing the blueberry filling: Add all the filling ingredients to a saucepan over medium heat. If you're using icing sugar, add a dash of water. Mix all the ingredients so the corn starch is evenly distributed. Once the blueberries have started to leak their natural juices, mash it a little bit with a fork .Leave some chunks in the blueberry mixture if desired. Allow the blueberry mixture to cook until slightly thick. Set aside to cool. The mixture will thicken as it cools. 4. Assembling the blueberry rolls: Grease or line a cake tray , roll out the dough into a rectangular shape. Scoop half of the cooled blueberry mixture onto the dough, reserving the remaining mixture. Spread the mixture on the dough so it's close to the edge. Tightly roll the dough from the long side. Use a sharp knife or dental floss to cut rolls out of the dough. Arrange the rolls in baking tray. Cover and set aside to rise for at least 1 hour. Brush with milk. Back in the preheated oven to 180°C (350°F) for about 25-30 minutes or until they are slightly golden brown, set aside to cool. 5. blueberry icing: Blueberry icing extras ( pushing the filling mixture through a sieve or blending it) 2 Tbsp powdered sugar 2 Tbsp cream cheese Add the powdered sugar and cream cheese to the remaining blueberry mixture mix well to combined. Microwave the apple slices on high for about 3 minutes to soften them. This will make them easier to roll. 2. Prepare the Butter Mixture: In a small bowl, mix 2 tbsp sugar, 3 tbsp unsalted butter, and 1 tsp cinnamon powder until well combined. 3. Prepare the Puff Pastry: Preheat your oven to 375°F (190°C) or according to the package instructions. A soft and chewy classic vanilla cookie, it comes together in less than 15 minutes and is a versatile base cookie recipe. Ingredients: 200g unsalted butter at room temperature 150g sugar 1 tsp vanilla extract 1 egg at room temperature 230 all-purpose flour, sifted ½ tsp salt ½ tsp baking powder sugar for rolling Instructions: Preheat the oven to 350°f / 180°c. Line the baking sheet with parchment paper (you may have to bake these in several batches depending on your tray size. (this cookie can also be made with an electric hand or stand mixer) In the bowl, cream the butter, and sugar until light and fluffy. Add the egg and vanilla and mix to combine. Sift the flour, salt, and baking powder in a small bowl. Add to the mixture, and mix until just combined. Place some sugar in a small bowl to roll the dough into it. Using a 2 Tbsp cookie scoop, scoop the dough (about 45g each). Roll each dough ball between your hands to form a ball, then roll in the sugar and place on the baking sheet. Leave about 2 inches of space between each ball to ensure that they will not join together. Bake the cookies for 11-14 minutes or until puffy and set around the edges. Remove from the oven and cool on the pan for 10 minutes - the cookies will deflate as they cool. Transfer to a wire rack and allow to cool completely. Chia Pudding with Three Toppings Ingredients (per serving): 2 tbsp chia seeds 1/2 cup milk (any type) 1-2 tbsp honey or syrup Instructions: Mix chia seeds, milk, and sweetener together. Stir well. Stir again after 3 minutes. Refrigerate for about 4 hours or overnight. Topping 1: Caramelized Apple 1 apple (or any favorite fruit) 1 tbsp lemon juice 1 tbsp sugar 1/2 tsp cinnamon Cook until caramelized.
