I've always loved the simple pleasure of cooking a delicious meal. Today, I'm sharing a recipe for a comfort food classic: roasted chicken legs with a creamy mushroom sauce. It's a dish that's easy to make, incredibly flavorful, and perfect for a weeknight dinner or a special occasion.
To start, I gathered all the ingredients: chicken legs, butter, salt, pepper, garlic powder, paprika, parsley, onion, carrots, mushrooms, tomato paste, flour, milk, and a touch of love. I seasoned the chicken legs with a mixture of salt, pepper, garlic powder, and paprika. The aroma of the spices filled the kitchen, making my mouth water.
Next, I roasted the chicken legs in the oven until they were golden brown and crispy. While the chicken was roasting, I got started on the creamy mushroom sauce. I sautéed onions, garlic, and carrots until they were softened, then added mushrooms and cooked them until they released their juices. I stirred in flour to thicken the sauce, followed by milk to create a creamy texture. Finally, I seasoned the sauce with salt, pepper, and a touch of tomato paste.
Once the chicken was cooked, I added it to the creamy mushroom sauce. The rich, savory sauce clung to the tender chicken, creating a mouthwatering combination. I garnished the dish with fresh parsley and served it hot.

For the Chicken:
- 4 chicken legs, with skin
- 50 grams (1.76 ounces) unsalted butter, softened
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1 teaspoon dried parsley
For the Sauce:
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 carrot, grated
- 300 grams (10.5 ounces) mushrooms, sliced
- 1 tablespoon tomato paste
- 2 tablespoons all -purpose flour
- 4 cups milk
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions:
1. Prepare the Chicken:
- Preheat oven to 350°F (180°C).
- In a small bowl, combine butter, salt, pepper, garlic powder, paprika, and parsley.
- Rub the mixture all over the chicken legs, making sure to get under the skin.
- Place the chicken legs on a baking sheet and roast in the preheated oven for 1 hour, or until cooked through.
2. Make the Sauce:
- While the chicken is roasting, heat a large saucepan over medium heat.
- Add a bit of oil to the pan and sauté the onion until softened.
- Add the minced garlic and cook for 30 seconds more.
- Stir in the grated carrot and cook for a few minutes.
- Add the sliced mushrooms and cook until they release their liquid.
- Stir in the tomato paste, flour, and milk. Bring to a boil, then reduce heat and simmer until thickened.

3. Combine and Serve:
