    Ok, call me a conspiracy theorist, but… I have a few doubts. I do believe that coffee roasters are for the most part honest genuine enthusiasts. It’s the bulk specialty bean sellers that I don’t trust. There’s no way of knowing what’s happening to the green beans behind closed doors in their facilities. My cynical guess is that the beans are routinely artificially flavored. Of course they make sure that there’s nothing that screams “fake”. Everything is done in a very delicate way, the impression of natural “complexity” is meticulously manufactured in the labs through synthetic compounds. That’s the sad reality of life: if there is demand for more “complexity” there will be supply. Again I don’t have any hard proof of that, this is just a speculation.

    Great info and delivery. I am a plant guy with landscaping for 30 years. I recently moved from sea level to the mountains of Arizona at 5300 feet. Man is it hard to grow plants at this altitude. I have been roasting coffee for 7 years now and love high altitude coffee to a light roast. Thanks for confirming my intuition about this topic.

    I had ordered what it supposed to be medium (city) roasted coffee but it turned out to taste like dark roast! In fact it goes stale in a week! It tasted horrible like burnt wood and cigarettes! I tossed all 9lbs! From then on, I decided to roast my own coffee by first owning a Aillio Bullet Roaster! I roasted it medium light and Full medium. Boy o’ boy! The taste is great! I can actually taste the flavor notes!

      we have an Aillio, too! Once you start tasting lighter roasts, it's simply the way to go, at least that has been the case for us.

    Full city or city+ is right before second crack. Wouldn’t that make it a light medium roast? I don’t consider that dark. 💜 Love your talk. Nice hanging out.

      right AFTER first crack, that is considered light roast, so once you are near 2nd crack, you're already at medium dark!

    Coffees are roasted to Full City+ & greater to hide defects. Processing defects & roasting defects dissappear at high levels of roast. This is the primary reason Starbucks roasts ALL their coffee to Viennese level

    Can you explain the most efficient way to empty the coffee grains after you’ve finished and someone else wants to use it?

      Simply rinse the glass flask with warm water and that should take care of the base. As for the metal mesh, I recommend always disassembling it, as many coffee grounds can get stuck between the mesh and the other parts. A clean French Press is necessary for a consistent cup!

    The best tastig coffee, I think, is brewed with a french press! I have a small stainless steel press and I absolutely love it. I boil my water with an electric kettle with auto shutoff, so I don’t have to worry about scslding the beans. It is just the best, i use fresh ground Costta Rican terrazu, i think the flavor is one of the best coffees I’ve tasted

      Not enough.. or too much, depends on who you ask 😅. Wake up and make 25grams on Kalita. Late morning repeat. Afternoon around 5ish an espresso or machiatto. Sometimes I finish the night with a Latte.

    just had some lightly roasted (Ethiopian) coffee for espresso, but i think it was too light. i think due to all the chaff in it, it had the notes of shreded wood/wood chip. how do yo deal with the chaff? interestingly other chaffy beans did not have this taste. probably there is a fine line from which it would not ruin the cup...

      Coffee should ship without any chaff! Try another brand of coffee and make sure the beans are clean!

      Hey, nothing wrong with a Dark Roast! But once you start working your way towards lighter roasts, you'll appreciate it more and start finding more flavors in the coffee

    Specialty coffee is the result besides quality, the pasión, love and compromise from every person involved in this science/art process, things that a cheap coffee just it's imposible to feel, my head blowed when I tried the honey's, but washed are complex and very interesting, the problem of this types of coffee is the unfair marketing of mayor coffee companies which is massive but their products has very low quality standars and the low information and difussion of this coffee, hope more people learn more about and join us in this amazing world, great video man.
