Looking to buy the IM10 (Its a single speed machine due to budget) 90rpm. Can you mix the dough all the way to temp(24c) with only this one speed.? Cheers for the great vid
@@brambleboohandmadesoapcomp3743 I Dont see why not! You're not mixing your dough to temp, however you Dont want to go higher than 24c while mixing. Variable speed is worth it though since your buying this matching for life.

Salt kills yeast. Therefore, I would hold off on adding the salt until after most of your flour is incorporated.

Around here we calculate % on flour, not water.
I love trying wood 🪵 cook pizza 🍕. The pizza wasn’t bad but it wasn’t the best pizza either. It was a great experience trying it. The pizza lacked flavor. Same thing with La Crosta. The pizza was 🫤.
Hello…have you tried to make a small amount of dough? What is the minimum amount of dough that is working pretty well on this machine?

@@michaelgrimaud4778 I tried 0.5 kg of flour with 350 ml of water today...it didn't work at all! The dough only wrapped around the dough hook and not around the bar at all. I think 1kg dough or 1kg of flour is the minimum the machine can handle. The specified quantity of 0.50 kg dough may only work with a very small amount of water
@@alexandermuller6087 I think 1kg of most things are good to have. That’s 4 250 gram balls. Or two large 16” pizzas. You’ll have better luck with 1k minimum
Hi Michael. I've just purchased the Famag IM-10 (it's in transit at the moment) for my future tent pop-up. What's the maximum dough amount that you've had in the mixer. I know the manual says 10kg of dough. But I'm naturally sceptical about manufacturers' specs.
Depends on the hydration of dough you’re making. I used to take it to the limit with 9800-10kg of dough, at 66 hydration. It worked! Now I just do two batches, about 6-8kg a mix to not overwhelm the mixer. There is a learning curve to the mixer but it’s amazing!

The amber flame and soot accumulation on the Roccobox is indication of incomplete combustion; it's starving for oxygen. Has anyone fixed this issue?

How many pizzas does he typically bake? Does he use only two Gozney Roccoboxes for that? Is Roccobox good for the pizza business, how many pizzas can it bake max?
With the roccboxs, you can cook about 1 pizza every 5 minutes with a maximum of 12 pizzas per hour.
@@magnightentertainment4032 Is this from personal experience? I know people who make over 100 pizzas with 2 Gozney Roccoboxes, that's why I'm asking?

Very well made video, curiosity, how good is the 10S with 1Kg of total dough? I am deciding on the 8 vs the 10 and while the 10 has a stronger motor, the 8 claims to be able to handle 0.5kg of dough.....
Why do you need only .5 dough? Just knock out. 1k and fridge the rest! That’s only 4 pizzas. Use the leftover dough for up to 3 days for focaccia, French bread, dinner rolls, or fuck it and enrich that bitch and make some brioche!!!! The point is. You’re always going to want bigger once you get down this path. Buy once. Go with 10.
I have the 5S and can make 5 kg of dough without missing a beat. BTW the 5S weights 66 lbs vs. 10S at 82 lbs.

The roccbox is great but you need a flame tamer, ever since I put 1 my pizza comes good. Less burnt spots and cooks more evenly

You're probably right about the wood option in a commercial setting - it's not practical. But if you're set up at home with the wood attachment, get all your stuff ready first - dough, sauce, cheese, etc - then, with an hour to go, light up the oven with wood and just feed it every few minutes. Add a couple of pieces a minute or two before you put your pizza on and you're good.
I agree with you completely! That’s what I do with home cooks, and love it.
@@michaelgrimaud4778 The only problem I had with my Roccbox gas is, on a windy and blustery day, the flame would blow out. So you still have to keep an eye on it.

what happened to your channel man? I enjoyed your videos when they were coming out. I came back to see what you're up to because you weren't in my feed. noticed you haven't been active for a year.
I use the propane burner and if I want a 'woody fired pizza' I put a few small sticks of wood at the back of the oven next to the propane flame just before I put the pizza in to cook. When the sticks catch fire, I put the pizza in and get the best of both worlds...convienience of propane heating and taste of wood fire.
