This channel is not devoted to only one thing--I love crafting, building, cooking, BBQ and hobby-farming! Thanks for watching videos of my adventures on my hobby farm as I build projects in the shop, cook great meats and treats over fire, grow things in the ground and take care of a boatload of chickens.

Weber Smokey Mountain Chicken Thighs
มุมมอง 5K2 ปีที่แล้ว
Thanks for watching this SHORT VERSION video on how to smoke chicken thighs. Smoked chicken is really tasty and this recipe is a great way to cook them. I'm smoking these chicken thighs on a Weber Smokey Mountain smoker today. I'll be cooking the thighs over charcoal and red oak. For me, BBQ chicken needs smoke, a good braise with plenty of Parkay and a good, sweet BBQ glaze at the end. These s...
Home Made Deer Jerky Recipe
มุมมอง 74K2 ปีที่แล้ว
This home made deer jerky recipe has an excellent flavor and is easy to make. Venison jerky is a fall-favorite deer meat recipe, and I prefer using ground deer. I love sliced jerky as well, but this ground jerky recipe is real crowd favorite. I use LEM products in this video, including the LEM 10-tray Mighty Bite dehydrator and the LEM Jerky Cannon. I also include pink salt in the recipe, so th...
Quick Smoking Ribs Steps
มุมมอง 7622 ปีที่แล้ว
Thanks for watching this SHORT VERSION video on how to smoke ribs. No matter what smoker you're using, whether it's an offset smoker or a pellet grill, these quick steps should help you have success right away. Smoked ribs are terrific and fun to eat, but bbq ribs can be finicky. Using an offset smoker, I go through each step rather quickly in this refresher video, while I'm explaining each ste...
DIY Easy Chicken Nesting Boxes
มุมมอง 25K2 ปีที่แล้ว
This diy easy chicken nesting boxes video shows nest box plans using some scrap plywood lumber. My homestead farm has a coop with chicken nest boxes, but I needed more. Hens will often share nest boxes, but prefer to lay eggs in their own space. In order to prevent chickens from laying eggs on the floor, I show how I build a couple double-wide nest boxes. Best, Shane paynecountyrust.com/ To SUB...
Easy Thanksgiving Smoked Ham Recipe
มุมมอง 2.7K2 ปีที่แล้ว
This easy Thanksgiving smoked ham recipe is a real show stopper. Many people like to have both turkey and ham for the Thanksgiving, Christmas or Easter holidays. In this video I show an easy recipe for smoked ham on the Weber Smokey Mountain smoker. When it comes to smoking ham, the secret to a good product is the glaze. There'll be plenty of smoke from the ham's original cure, plus this recipe...
Quick Brisket Trimming
มุมมอง 6852 ปีที่แล้ว
In this video, I show how I trim a brisket for bbq. Beef brisket comes from the store in several forms, but most barbecue cooks prefer what is called a packer trimmed brisket. Whether you're smoking in an offset smoker or a weber smokey mountain for a competition brisket, grilling on a pellet grill or just baking in the oven, it's a good thing to know how to trim the excess fat off these big cu...

Nice job. Did you use the water can?
Followed the video as close as possible, brisket turned out great, used your Payne County Rust and Butcher BBQ injection. Very pleased with the results!
Where can u get smoke box ?
But the only problem with me there's high percentage of jars getting broken every now n then after falling down from my untidy hands while unscrewing 😂
Thanks for sharing your recipe, gonna give it a whirl sometime in the next few days just waiting on some ground beef and venison mix to thaw. Anywhere near Benton Ar. I can find your Marinade?
You created some beautiful and well thought out solutions-I challenge you to make it even better by building a duck pond so the ducks can fully immerse themselves. Also, look into using coconut coir for nesting, not flat but fluff it up for them…All of the birds run away when you come by, do you talk to them or try to give them treats out of your hand?
How many chicks can you keep in this space
do you clear coat them?
all types duck in port africa , you like types duck america or america latin or eroupa or africa , im waithing in port africa Buy 4 pcs free 2 pcs
HELLO,,I WAS WANTING TO ASK ABOUT THE DRIPPINGS FROM A PORK BUTT,I USE IT TO MAKE AN AUJU,THE RED PART THAT IS LEFT WHEN YOU LET IT COOL,CAN YOU EAT THAT? T HAS THE MOST SMOKY FLAVOR,ALSO TALO,IF YOU BUT IT IN THE STORE,WHAT BRAND DO YOU RECOMMEND? THANKS
Love the Payne seasonings Just found them at meat market in shawnee Used everyone for our Christmas dinner. Everyone loved it
Just got a shoulder replaced. As soon as I may, I am going to give this technique a try. I'll let you know.
I have smokers, gas grills, charcoal grills, and griddles. My gas grill is a Weber Genesis four-burner. I've smoked briskets many times on the smoker, but I want to do this on the gas grill and follow your lead. That said, I haven't received any encouragement from my son-in-law, who is not a fan of gas in any form except griddling. I'll follow-up with the end results. Smoking a 14.5 lb prime brisket from Sam's.
I have to couple question Payne if you see this I would like to ask you
Great video! Got a ton of ground venison. My son’s done good this year. A buck and doe. My question is had the ground meat mixed with some pork. Can I still dehydrate it?
THANKS!!! Just did my first brisket. 22.5 WSM at 250 for 8 hours. I did put a small disposable water pan with about a quart of water on the second rack. After 8 hours I double / triple wrapped it in foil and put it in the oven at 265 for 90 minutes and turned it off at 9:30 PM. I did not open the oven and did not check the temperature. At 10 AM the next day I turned the oven on to 175. At 1130 I pulled the brisket out. Had 2 cups of liquid in the foil. My wife (who doesn't like brisket) LOVED it as did everyone else. it was just as good as the local BBQ place. I will mention that we eat a lot of wild boar and commonly leave it in a closed oven for hours after turning off the heat
Yes it work
My jerky cannon hasn't left its box in 15 years. Spent more time loading it than emptying 😅. Turned out to be better to crush tube down on the vertical stuffer to 1/4" and move dehydrator tray back and forth.. WAY faster, less filling, less hand washing.
You're amazing thank you.
I'm glad to see that your going to make video's on You Tube again. I enjoyed watching them.
It’s nice to see you’re doing well ! Great products tend to do that 👍🏻🍻
Woo-hoo about time. I totally lovr your bbq, seasoned 💜👏👏
Guess ima gonna grow flowers
this is super cool! So, I do a lot of crafts with animal parts. I could leave a raven torso and body (harvest the wings/talons) and come back a few months later and i should have bones?
😮wow i love it!!
Is curing salt really necessary? I've been making jalapeño deer jerky for 4 years and I've never used the curing salt. My dehydrators go up to 155 and I've been told that's warm enough to get rid of anything harmful. So should I be using curing salt? Instead of just iodized salt
I have boiled em in the past and scraped em. This is a cool option thanks for the info.
T stand for teaspoon or tablespoon?
Capitol T should be Tablespoon, smaller case t should be teaspoon.
Do you serve the breakfast sausage cold or hot?
Nice 😊 Ima try it ✔️
Man, Great video. Helps alot. Thanks 😊
Did you put water in the bowl?
Grate job! (pun intended) Running a calculator on my 40"×20" grate, that will be 67 lbs. Super heavy and probably going to be an issue. Does a 3/8" gapped at 1/2" perform similar in cleaning and heat sink qualities? My current Lyfe Tyme smoker uses expanded sheet and flimsy. This would be ok on the fire box side at 1/2 thick.
My ducks need to swim to oil their feathers, and mate. They need high humidity to set eggs. Ducks need water.,light, and wood to sit on. Mess is all part of it, they are aquatic birds.
Bro you are very gifted, and a great friend I wish you were my neighbor in Pennsylvania.... I have a 1 year old OJ highland and would love to reinforce and customize mine just like this but maybe with a KC chiefs logo instead thanks for the vid brother
This is great! I have a 25+ year-old Weber genesis gas grill I’ve always wondered if there was a way to do a smoked brisket on it and I’m going to try this for an October party in a few weeks. Can’t wait.
Great design and somewhat beginner friendly. The video needs either close up shots or a little more commentary.
Try using a drinking straw and suck the air out of the baggies. It lasts longer and prevents freezer frost.. I do that at times but usually use a vacuum sealer. They really extend the life. Thanks for the recipe.
Try pushing the freezer bag down in water then zipping closed. Does same thing without all the straw sucking.
Really nice ... I'm a new mother of two ducks now. I've been working really hard to make things easy on me and very nice for them. I forget about this every once in awhile but your video reminded me, 😡🤬 snakes...😢😢😢😢 I don't want snakes
Purina puts poision in dog food! Name brand? Your insane.. People are suing Purina for dead dogs. 2 years off chickens could lay eggs because of the feed. We.will pass on you.... Read the ingredients Glycol propylene
does regular butter work instead of the margarine etc?
What temp did u cook them at?
Wow nice
what temp did you smoke this at?
Wow what a nice set up and watering system idea
The whites look much better formed in the Purina feed, the feed store pellet whites look loose and watery.
Amazing chat would love some more like this!
great vid
What do you do with that much meat thats been cooling down all night?
