That's a good idea. Most vids use to grates to create an angle for it to be cooked on. The spit can be stopped with fat facing coals to crisp it up. 👍🏾

No, you can't because of the curvature of the barrel. I think they should have made the top rack take up the entire rail. I don't see a need for that to slide back and forth. It only moves a few inches.

What makes good chicken is the char. This chicken comes out too light colored. I was hoping in the end you’d increase heat or drop it down a bit and work the skin to be darker and have more char

I got the big one from you a couple of weeks ago. Used it last weekend with some belly pork and sausage. Great results. Had water bath in there and it sat at 240 (external probe using those eyelets) without any faffing around. Previously used an offset and the ProQ was way more user friendly.
