This is likely an issue with your grinder. When you were using the pressurized basket, it artificially created the "crema" for you. It wasn't true crema, and more like foam/air bubbles. Now that you're using a non pressurized basket, you're seeing the true limits of your setup.

Where did you get your new portagilter? It looks nice! Freshly grinded beans is the key to a good crema, so grind it right before u brew it. Also, the beans are at their best between 2 weeks to 3 months after roast date. Using a distributor also helps ( the tool with many needles) Enjoy your brews 😀

Grind your beans finer. Freshness of the beans really does not matter for espresso or espresso based drinks.

It is very powerful to be able to be alone and light that candle, buy that cake and do those things for YOU! The most time you spend with someone in your life is with yourself. So get comfy with it😂

Usually if no crema, it's because the coffee beans are not fine enough. You also want fresh beans. Your home is coming along nicely. You have delightful taste in your decor and it feels very calming 👍
