Pineapple Tart
Filling:
300g store-bought filling (I use RedMan Premium Pineapple Paste Filling)
Skin:
50g clarified butter
30g butter
20g icing sugar
1 egg yolk
1/4tsp vanilla
70g plain flour
35g corn flour
30g milk powder
Egg wash:
1/2tsp skin dough
2 egg yolk
1/2 tbsp cooking oil
oven 140°C for 20 minutes
let it cool for 10 minutes
put egg wash
back into the 140°C oven for another 20 minutes

I try to keep the process in room temperature between 25-27°C, because if it's too warm it can get moldy. Actually you can use any type of flour but you have to adjust the amount of water to get the right consistency. I like 50-50 combination between artisan bread flour and wholegrain flour. When I was a small kid in China, I had mooncakes with many kinds of filling such as chocolate, black sesame, red bean, Chinese jujube. They were all very delicious. Only Cantonese style mooncakes have egg yolk, and they are now very popular in China. But I still miss those mooncakes I had when I was a child.

I tried using your recipe but once i start cutting it and rolling it out and putting the filling in, it will be dry and easy to break and wont seal at all. Why is that?
mine broke as well. that's why I try to be gentle. try to cover it when storing or when it's not in use to prevent it to get dry.

@@blessingng1553 I'm not sure how to help. The skin is chewy, but I don't consider it sticky. I eat them while it's still cold. Few minutes after I took it out from freezer.
