Colby Jack Rabbit is a one-woman cottage food bakery in Helena, Montana that specializes in animal-shaped meringue cookies and Italian macarons.
How to Make Animal and Character Meringues | Italian Meringue Recipe
The Italian meringue recipe and piping techniques in this video tutorial will give absolute beginners a place to start when learning how to make their own animal and character meringues.

RECIPE:
• 130g egg whites
• ½ tsp cream of tartar (for the egg whites)
• 260g granulated sugar
• A pinch of cream of tartar for the sugar syrup
• 77g water
• 1-1/2 tsp vanilla extract
1.In a small saucepan, combine 260g of sugar and a pinch of cream of tartar. Add 77g of water and stir until all the sugar is moistened. Wash the sides of the pan with a pastry brush and water. Clip a candy thermometer to the side of the pan and turn heat to medium.
2. Meanwhile, add egg 130g of egg whites and ½ tsp cream of tartar to the bowl of your stand mixer.
3. When sugar syrup reaches 235°F, turn stand mixer on to start whipping the egg whites (I use speed 8 on my KitchenAid). You want to time it so the egg whites are foamy and resemble bubble bath at the same time the sugar syrup reaches its target temperature.
4. When the sugar syrup reaches it’s target temperature of 240°F*, slowly pour it into the foamy egg whites.
5. Continue to whip egg whites to the soft peaks stage, or right before it, and add 1-1/2 tsp vanilla extract.
6. Continue whipping to desired consistency. Gel-based food coloring can be added while whipping or stirred into smaller portions of meringue.
*Subtract 2°F for every 1,000 feet of elevation above sea level (if you live at elevation).

The amount of practice it takes to make these perfect everytime is crazy lol. I still have a ways to go before I hit this level but my technique is improving with each set. Definitely have to have it in the slightly medium peak range to have it be smooth

Absolutely incredible! I'd love to know what kind of meringue you use, what you use to colour the meringue, and how you set them. My Mom and I would tell stories of a momma and baby sea otter on hikes when I was a kid. If I could manage to make one of these, although I'm sure it wouldn't be as spectacular as yours, she'd be over the moon.
Thank you! 🥰 I use Italian meringue with a little bit of cream of tartar for extra stability. I use Wilton and Chefmaster gel based food coloring. Not sure what you mean by setting them, but I bake them at 200F for 2-3 hours. Hope this helps! ❤️

If you don’t mind me asking , what recipe did you use ? I tried making these a while back ( made some pikachu ones ) I wanted to try to get back into it 😇
I have the recipe pinned in TikTok and somewhere on Instagram. Someday I’ll post it on here. If you do follow my recipe, be sure to heat sugar syrup to 240F before whipping into egg whites (I misspeak and say 140F in the video 😅). Any Italian meringue recipe should work, though!

If you whip the meringue to stiff peaks, the color should not bleed. 😊 If under whipped, the color can start to bleed a little, though.
