안녕하세요~! 너무 오랜만에 업로드합니다!!
요즘 핫한 디저트가 크루키랑 두바이초콜렛이잖아요ㅎㅎ
크루키는 전부터 계속 먹어보고 싶었는데 이번에 한번 만들어봤어요~!
어떤맛일까 너무 궁금했는데 먹어봤더니 왜 크루키 크루키 하는지 알겠더라구요!! 버터풍미 가득한 크로와상에 달달한 쿠키가 같이 씹히니까 극락이더라구요!! 이번에 만든건 미니 크로와상 생지로 만들었는데 미니사이즈라 그런지 한번에 먹기 부담도 없고 더 좋았어요. 당도도 너무 많이 달지 않게 좀 조절해봤는데 그래도 달다 싶으신 분들은 설탕량을 좀 더 줄이셔도 됩니다!
하지만 이런 디저트는 달달한게 최고잖아요ㅎㅎ 커피랑 먹으면 딱입니다!
제가 이번에 쓴 미니크로와상 생지가 AOP버터로 만든 생지라서 다른 생지들보다 훨씬 풍미가 좋고 맛있었어요~! 링크도 걸어놨으니까 한번 꼭 구매해서 만들어보세요!! 그리고 3가지맛 (초코칩, 로투스, 말차) 다 너무 맛있으니까 여러가지 다 즐겨주세요~!

▶재료 (미니크로와상 크루키 6개분량)
- 무염버터 126g
- 흰설탕 70g
- 갈색설탕 70g
- 소금 3g
- 계란 37g
- 바닐라익스트랙 3g
- 강력분 120g
- 중력분 80g
- 베이킹소다 3g
(초코칩반죽)
- 기본반죽 170g
- 초코칩청크 50g
(말차반죽)
- 말차가루 5g
- 화이트커버춰초콜렛 30g
(로투스반죽)
- 시나몬가루 3g
- 로투스쿠키 30g
▶Ingredients (6 mini croissants crookies)
- 126g unsalted butter
- 70g white sugar
- 70g brown sugar
- 3g salt
- 37g eggs
- 3g vanilla extract
- 120g bread flour
- 80g of all-purpose flour
- 3g baking soda
(Chocolate chip dough)
- 170g basic dough
- 50g chocolate chip chunks
(Matcha dough)
- 5g matcha powder
- 30g white couverture chocolate
(Lotus dough)
- 3g cinnamon powder
- Lotus cookies 30g

    선생님, 저는 자꾸 틀에 너무 딱 달라붙어서 안떨어져요ㅜ 그러다 목 부분이 잘려버리고요 지금 6개째 동일한데 이유가 뭘까요ㅠ 틀에 까놀라유도ㅜ왕창 발랐는데요ㅠ

      냉장고에서 꺼내고 실온에서 충분히 둔 다음에 살살 흔들어서 빼내야돼요! 냉장에서 꺼낸채로 그대로 분리하면 다 깨질거에요..!! 아니면 젤라틴 용량을 더 늘리는 방법도 있습니다! (실온에 30분이상 방치한 다음에 틀이랑 분리해주세요!)

      네~! 동일제품이에요~ 제가 구매했을때는 본드자국이나 그런건 없었는데 뭔가 바뀌었나보네요.. 동일 사이즈의 나무카스테라틀이면 다른제품도 상관없습니다~

    영상처럼 계란을 한번에 다섞는 방식과 흰자따로 노른자따로 머랭후 합치는방식은 무슨차이가 있는지 궁금합니다 밥솥카스테라 실패후 여러방식을 보고 있습니다

      공립법(계란한번에휘핑)과 별립법(흰자,노른자 나눠서 휘핑)의 차이인데요~ 두가지 방법으로 했을때 섞는방법과 과정이 모두 달라집니다, 식감도 차이가 있구요(별립법이 좀 더 쫀득한식감, 공립법은 좀 더 폭신한 식감입니다) 별립법으로 했을때 제일 중요한점은 따로 흰자 머랭을 쳐서 머랭이 꺼지지 않게 반죽과 빠르게 섞는건데 이부분이 초보자분들이 하기엔 조금 어렵다 느끼실 수 있어요~ (머랭의 상태도 중요하구요) 공립법(계란전부휘핑)할때 온도를 37-38도로 올려서 휘핑을 하게되면 거품이 풍성하고 많이 올라오기 때문에 반죽을 섞는 과정에서 볼륨이 죽는걸 많이 예방해줍니다 그래서 공립법을 더 추천드려요 ~
