Thank you so much. I have spent many hours doing research. I have also concluded the same things that you found. I wish I would have found this video sooner. 🤣I also found that video of the sushi master eating Walmart and Costco fish. It is one of the first videos I found. It implied that you were good to go with it. Fish just needs to be frozen and that is that.

Freezing kills parasites… not saying it couldn’t happen but I’ve eaten raw fish from Walmart for years and haven’t gotten a parasite. After thawing I smell, has only happened twice I’ve noticed a fishy smell at which I don’t consume raw.

Smaller fish have less parasites, freezing the fish renders them safe. Like pork, all pork is frozen in the USA to eliminate trechamonous. Large fish, no matter the breed, is 99% guaranteed to have parasites. Cryogenic frozen fish, is the only way to search for safe foods. Parasites in salt water fish, is harmless to humans. When making sushi, soak the fish in a Soy solution or rice wine. Most sashimi is soaked in saki for example, we don't taste it. Because the chef knows how to mask, change the flavor profile to suit our flavor palette. Walmart Ahi Tuna, is frozen Cryogenic. It's safe as is the Salmon, that's vacuum packed. Not the regular meat packaging that retains oxygen. Eat more fish, relax, enjoy !!!

Being asian myself I always buy at American grocery stores because everytime I buy from asian grocery stores it always made me sick. I always end up throwing up. It always taste like it came from a polluted sea. It's like asian people doesn't seem to care about cleaning the fish. They just there to chop the fish they get from sea and make money and not care about rhe customers. Even after I clean it it still taste like it. why I stop buying fish from asian markets.

I randomly realized watching this video that I have never seen anybody eat sashimi with a fork. I assume this guy uses a fork for everything else, but keeps a pair of chopsticks at home dedicated to raw fish?
Gonna be honest, I think out of all the "raw" type foods, only medium rare steaks and raw eggs seem worth the flavor. Eggs are protected by their shell, so keeping them clean usually means that you can eat it raw relatively very safely. Making a tender steak is impossible without other types of cooking or tenderizing techniques, which usually makes it not a steak anymore. Sushi and Sashimi is pretty good, but a lot of the flavor ends up coming from what you put on it. The raw flavor is okay compared to what you can get with other things, unless its a really good fish known for something (also sometimes more expensive lol). I think an interesting alternative would be smoked or cured fish as opposed to straight raw.
I really appreciate the conclusion (that you also led the video with). As much as we'd like to believe we can learn and retain enough information from the internet it can't compare to professional experience. And most people who do the things you want for a living have a lot to share and enthusiasm to show off what they know.

Frozen is actually the only way you want to buy shrimp. In Florida, the shrimp come off of the boat, they’re individually quick frozen (IQF) and then bagged. The small time shrimp crews just sell the shrimp fresh locally but it’s just horror story after horror story. Never heard of anyone getting sick from an IQF shrimp.

Raw fish is tasty
In my culture we bathe it in sweet citrus and vinegar, with shallots and tomatoes with a dash of salt. The vinegar kills anything alive in the meat, and the meat is sliced very thin.
