you absolutely right, this the salad I grew up with and in my home country (Ukraine) was very popular. And walnuts would be more traditional. The reason why I introduce this salad as a Russian, because its more easily to search for Russian speaking community.

I love boiled eggs with a little bit of quality salt and fresh cracked pepper. Yummy. Great night time snack.
Slowly add pasta water to the egg/cheese mixture to temper the egg. Then add it to the pan with the pasta.
there many ways can be done, but the key is not end up with scramble eggs
Guanciale. Or maybe pancetta. But not bacon, especially if it is smoked. Pecorino, not Parmigiano. Watch the salt. The meat, regardless of what you use, is salty. So is the cheese.
No cream,no extra egg yolk,no guanciuale pigs cheeks..
So simple to do! I challenge us all to make this dish! Quality ingredients equals quality taste.
