Why do white people like to throw away so much meat when they trim?
Work in a slaughter house and I de-pork shoulder, only time I use saw is to split rib form back bone. I tunnel bone the hoock to release it. The shoulder blades.. well I do it better.. nothing left on the bone when I do it. It ain't the hardest. I do about 60 a day. The factory I work for produce meat for the UK market..

Yes in many different countries cuts of beef all have many different names, this is hard for when making videos, In New Zealand we call the Rump and in the the States it is called Top Sirloin, but in NZ the Sirloin is called sirloin but you call this Striploin Cheers BBQ Butcher

Thank you for the help! I did get a bit confused because my leg isn't as full as yours. I ended up with just the butterfly and the shank. And I also struggled cutting through the knee, but I learned a lot (I needed to cut below the knee, not above it) and I'm confident I'll do better next time
