Pulled out the OCGF Smoker and did some ribs. No wrap, no spritzer. This thing holds in moisture like a champ!!!

I decided to try Smoking a brisket overnight at a low temperature and bump it up the following morning. It turned out awesome and my guests loved it.

I had a pellet smoker for eight years, put out some amazing food, but I was always missing something. Smoke flavor. Finally get rid of it. It is good for chicken where a lot of smoke flavor is not required.

Thanks for the tips on what needs to be cut off when prepping the ribs. I’m strictly an oven ribs girl..for now but this was really helpful! Lastly in the end what did you mean by “a clean bite”
Pretty my means where I bit is the only meat that came off the bone. “Technically” fall of the bone ribs are considered overcooked. It’s one of the biggest debates when it comes to ribs. Lol.
