We use one pack of leggs to 20 lbs of meat.....
That would give it a little more flavor. After experimenting for some time, I believe Leggs is one of the best choices out there.
@@cedarfallsfarm9833 we also add black pepper and crushed red pepper depending on how hot we want it. Leggs is very good stuff.

Hello, from N. Alabama. This is good info!! What do you recommend as a good, fairly priced Sheep Casing source? Most is priced at a $1 per lb.
I've been buying LEM sheep casings, but the last two batches I bought had a lot of blowouts. I need a new source and don't want to buy something packaged in Asia. Let me know if you find a good source. Thanks for the comments and for tuning in to the channel. Mark

It certainly is. I had a couple of bags of trash in the truck, but it was late when we arrived. The trash pandas found it. What a mess this morning.
Idk why but I’ve always wanted a farm so I could raise goats, I don’t really want the milk or meat I just think it’d be cool to have goats.
These are just big pets. They are really low maintenance and live their best lives. When we sold off our chicken operation, I couldn't bring myself to part with the goats. Told the wife I would love to have an intact billy so we could have some little goats!

We're trying to wear it out! Camping every month if possible. October camping ended up being at the farm since there was no power in the house. It sure was nice taking warm showers and watching the news during the hurricane outage. Those red flags were definitely a suggestion to a couple of folks!
Good repair but it is hard to weld thin stuff with a stick welder.
It definitely was. I did go back after I recorded this video and reinforced the welds with my MIG welder. I was still a little frustrated with it when I did the initial repairs. This was supposed to be a temporary mod, but you know it is only temporary if it doesn't work.
Hate to see you struggle through that weld. I bought an ARCaptain pocket welder off of amazon and it’s gasless mig or stick. I have probs with blowouts and also striking off and keeping a weld with stick but have gotten pretty handy with the mig. Let me know next time you are gonna weld and I can load it up and stop by!

I went back later with the MIG and fixed it up better. The two metals from the exhaust and the muffler weren't too compatible. I was able to do a much better job with the MIG.
PS, as in indicator of how far behind I am, this was recorded in August!

Is the AC Leggs # 10 spicy hot ??
@@newteripin no, it's not too hot. There is some red pepper and sage. The AC Leggs #29 is milder. I do believe there is a hotter blend, but I've reached a point to where I can't tolerate the spices. It's unfortunate as I always liked hot and spicy. Guess it's a getting older thing. You can look up their different blends online. I also like their Sweet Italian Sausage blend.

Any luck with this treatment? I’ve been fighting scale going on 2 years now on my orange tree. I’ve tried Neem oil, manual removal with soap and neem spray and even granulated insecticide. They just keep coming back….
It actually did help. The best thing was moving them outside to enjoy the summer sun. They have been thriving on the deck. We just had upper 40's F last night, so I guess it is about time for them to go back in the sunroom. Honestly, that scale almost took them out.

Berea was hit pretty hard. We losta lot of big trees amd still have no power. Running on generator.
Our farm was hammered pretty hard. No buildings are damaged, but tons of trees down everywhere. I've not done anything here at the farm other than a partial assessment. Been working with our Fire Department, cooking for them, delivering food and water to some of our older folks, picking up groceries, etc. Back over there tomorrow morning to feed our 1st Responders and Law Enforcement. Still no power down here in the Southern area of the county. Some spots are good, but no power here before Friday. Dropping $70 a day on gas.

When I think about Western North Carolina, we are blessed. My stepson is just outside of Hendersonville. He was just able to get out of his driveway today. Thought I would have to drive up and cut my way in.
@@cedarfallsfarm9833 The neighbor across the road had twelve trees across his 150 foot long driveway. One of the root sections broke his water line so he has no water either. It took a while to cut his car out.
All that matters is that you, GA and my dog Link are OK....

Hi Ron, I actually stopped by and spoke with my neighbor that works over there. He came back to his farm to clean up the damage. There were some trees lost and water and power were off. He called me late this afternoon to let me know that both had been restored. We're going to cancel our reservations due to the damage here at our farm. We're without power power here in lower Greenville County. I'm a Fire Commissioner here at Canebrake Fire District and there is extensive damage throughout the district. Between the farm and the community, we've decided to stay close and continue camping here until we can restore some semblance of order. Enjoy your stay over there, we're certainly going to miss being there. I have a new video that is finishing uploading now showing a little of the local damage. Check it out if you have time.

This is an awesome video for many reasons! 1.) I have been on a DIY Breakfast sausage quest for years, and I still can't find the flavor I like. 2.) You lived in France, and I lived for many years in Germany. 3.) You worked for a French tire company, and I currently work for a Swedish automotive manufacturer. 4.) We both live in SC. I'm in Charleston. I've always wanted to make my own sausage seasoning blend, but really... I'm just trying to make it taste like Jimmy Dean. Every "Jimmy Dean Close Recipe" in the internet seems to get it pretty wrong. Can you tell me, does the A.C. Legg #10 get into the Jimmy Dean ballpark? And what's the difference (in your opinion) between their #10 and #29? is one more Jimmy Dean'like, than the other? Keep the videos coming. I love it!!
Very kind words! I'd say it's in the ballpark of Jimmy Dean, but in my opinion, even better. #10 has a little more sage and pepper in it than #29. #29 is a little milder. Both are really good. I almost always use #10 and add some more sage and a little sugar. On occasion I add maple syrup. I also love their Sweet Italian Sausage blend. Once you get started the sky's the limit. I tried for a long to to get the right flavor profile. A.C. Leggs made me stop the search. Good luck with the sausage making. I'll be adding another that primarily focuses on stuffing breakfast links and hopefully soon adding a tutorial on Merguez sausage.

I used my usual A.C. Leggs Seasoning #10. I'm fairly certain I do briefly go over it.

Im new to sausage making, I've make a jalapeno cheddar and Italian sausage, my next is going to be a breakfast sausage, glad i came across this, quite a process but the volume you made is crazy! Didn't you say you added sugar as well? Great video man!
I do add just a bit of sugar and a little extra sage. There are some good resources on the A. C. Leggs website on making smaller batches. Best of luck with the sausage making. I hope to add a new one soon on making Merguez sausage. It's a North African lamb sausage. Absolutely delicious.

I mean I see what you did there and you're not wrong but as an executive chef in restaurants we order bacon by the 10 lb case and it's almost never wrapped due to being a cured meat it shouldn't have to be technically. Well that and everyone loves bacon so we cook so damn much of it 😂😂😂
Heck yeah! I cook a lot every month at our Fire Department for the 1st Responders Breakfast. I'm convinced serving size is packaging related. I just haven't been brave enough to buy the 10 lb box at Restaurant Depot yet!🤣😂

@@adnacraigo6590 I got smart on that Saturday morning. Friday evening I was welding in shorts, ended up getting slag down my boots and burning my ankles. Also had arc burns on my left knee. That is why I was wearing long pants in the video. A rare occasion for me!😁😉
Nice video! Great set up you have there! You even have a ice machine! I have a #8 LEM grinder. If i grind likr 25 lbs of pork butt the back of my auger get extremely hot! One time i could actually smell the pork back there cooking! I think it a design flaw.
Much appreciated! Do you keep your auger assembly in the freezer? For me, that is an absolute necessity. I make sure my meat is cubed up and almost frozen before starting. That will keep you grind looking good and prevent the fats from breaking down. I need to post a couple more of these type videos. On one I will be making a merguez sausage and sharing the recipe. Thanks. Question. Does the bike have to be powered on to put on the front wheel? Mine seems to be difficult to press up into place, and I dont want to force it and break something. Is there a parking break or something that has to be released? Help help help!
No, the bike does not have to be turned on. There is typically a "plug" in place to be removed. It is easier to turn the bike upside down to install the front wheel assembly. Watch closely for the alignment of the brake when installing the wheel. Good luck!
Thanks, I'll watch out for that. I've had this trike over 49 days and I've never even sat on it because the wheel they shipped me had a hole in it. Hopefully I'll drive it this weekend.

The box lifts off with removal of plastic squares in the side, and you get a full view of packing, and what to cut with heavy duty scissors

That's a pretty nice tractor. It would be hard to take care of acreage without one.
It has some hard hours on it. Been using it for 12 years now. Definitely couldn't maintain the farm without it. I also have a Ford New Holland 1715. I use it a lot for cutting fields.
@@cedarfallsfarm9833 I have a New Holland TC-30 which is a 30 horsepower diesel that I use on our 40 acres mostly for mowing and firewood/logs.
