Sweet Potato Curry

Sweet Potato Curry (Serves 4-5)
Ingredients:
4-5 tbsp coconut or vegetable oil
1 tsp mustard
1 tsp cumin
4 cloves of crushed garlic
some curry leaves
2 medium (150g) onion
1 medium (100g) tomato
1/2 tsp turmeric
2-3 tbsp fish chili paste (as rq - recipe in descrp.)
1 tsp salt
500-700g sweet potato. (Use Indian sweet potato for best results.)
1.5 cup water (If you're using a cooker, add 1 cup water)
1 pc jaggery
some coriander leaves
Procedure:
1. In a pot, add 4-5 tbsp coconut or vegetable oil, 1 tsp mustard, 1 tsp cumin, 4 cloves of crushed garlic, some curry leaves. Fry.
2. Add 2 medium (150g) onion. Fry until light gold.
3. Add 1 medium (100g) tomato. Mix, cover and cook until soft.
4. Add 1/2 tsp turmeric, 2-3 tbsp fish chili paste (as rq - recipe in descrp.), 1 tsp salt. Fry well.
5. Add 500-700g sweet potato. (Use Indian sweet potato for best results.)
6. Add 1.5 cup water. Cover and cook till done. (If you're using a cooker, add 1 cup water and cook for 1 whistle.)
7. Add 1 pc jaggery, some coriander leaves. Mix, cover and cook for 2-3 mins.
8. It's done! Serve it with rice or chapati and enjoy!
