My name is Chris, or POPS to the people who love me. I started my little channel here for my kids, mostly.
My father passed away in 2019, and I felt such a deep, abiding void inside me. I really wanted to just hear his wisdom and his voice again. But, I didn't really have a way to do that other than a few videos in my phone.
I decided that I wanted a library of stuff for my kids for that day down the road when I'm gone. Mainly, my recipes, my music and my memories. I'm gearing up to retire, and want to highlight that journey also.

I have heard all sorts of things about what will yield a crispy cookie, including to use a flour with less protein in it, and don't use as much flour, and to knock the pan with the raw cookies against the counter. I have always heard… less flour… more butter… the egg adds moisture, so some leave it out… and lower oven temp and bake longer. I’m going to try again!!

Add one 15 ounce can whole kernel corn 1/2 cup sliced green olives. Use flat egg noodles mix together top with shredded sharp cheddar cheese bake 375 for 45 minutes. Covered for majority of the time so cheese doesn’t burn. I won a beef cook-off with this old family recipe. No chili powder though. Couple dashes of wostershire sauce.

I learned that you do NOT put raw cabbage in the disposal. I just grinds finer and finer then it sets up like concrete. In the middle of all the work and company. It was an experience. 😆

Poppy, if someone is out of buttermilk, can they substitute regular milk with some vinegar in it? This skillet bread sounds especially good for summer, when you want something like a biscuit but don't want to heat up the oven.
I do that quite often, Merry. I’ll do a tablespoon of vinegar in a cup measure and fill the cup the rest of the way with whole milk. I let sit 5 minutes and it’s pretty much buttermilk. Yes, for warm weather… skillet bread is the way to go!

I make my chili in a cast iron pot just like yours, instead of cooking it on top of the stove, I put my chili in the oven at 350 degrees for hour and a half......dun

I first heard of Tony Chachere’s from Josh on Good Mythical Kitchen. He loves the stuff like you do. So I did get some for my spice collection.
When I lived in Louisiana, it became a way of life. I don’t think my kitchen has been without it since 2001. It’s amazing. When I moved back to Florida, I had to special order it. But now… I can get it all over. 😊

Just let me know! I appreciate you stopping in. The cream is just 1 cup of heavy whipping cream, but I add more broth and more cream until it feels right. 😂 A lot of intuitive cooking in there. Creamy Tuscan Garlic Chicken Ingredients: 1½ pounds boneless skinless chicken breasts thinly sliced 2 Tablespoons olive oil 1 cup heavy cream 1 cup chicken broth 3 to 4 cloves minced garlic 1 teaspoon garlic powder 1 teaspoon italian seasoning 1/2 cup parmesan cheese 1 cup spinach chopped 1/2 cup sun dried tomatoes Directions: In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate. Add the heavy cream, chicken broth, garlic powder, italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt. Add the chicken back to the pan and serve over pasta if desired.

POPPY’S FANCY SAUCE ½ Cup of Mayonnaise ¼ Cup of Ketchup 1 Tablespoon of Worcestershire Sauce 1 to 1 ½ Tablespoons of Sugar (Depending on how sweet you want it.) Tony Chachares or other Creole style seasoning blend, to taste Black Pepper Whip all ingredients in a bowl with a whisk. Allow mixture to sit in the fridge for 15 to 20 minutes so the sugar dissolves. Whip again. Serve as an AMAZING dipping sauce for Chicken… Steak… Pork… Vegetables.

I’m going to do apple butter but my son-in-law wanted to be part of that one so I’ll have to work around his schedule. I make apple butter in my crockpot and it cooks all night long. So, that’s really a two-day video. (Two days recording, but one video.). I’ll definitely work on it.
