Healthy Vegetable Side Dish Recipes
Blanched Asparagus With Mint Gremolata & Garlic Parmesan Fiddleheads
I absolutely love both of these veggie side dishes. The asparagus recipe is bright and zesty, and ready in 15 minutes! And the fiddlehead recipe is super tasty and interesting. The fiddlehead recipe will probably only be able to be enjoyed in the springtime, but the asparagus recipe can be year-round.
These recipes are absolutely Mediterranean diet friendly! For the most part, people in the Mediterranean typically use olive oil instead of butter when cooking. But occasionally butter does enter the kitchen, so don't let one tbsp of butter run the fiddlehead recipe for you! There are no strict rules on the Mediterranean diet, so use what you have, and if you don't have any butter, or don't want to use it, feel free to sub it out for more extra virgin olive oil.

I just turned 45 last week. If I switch to this diet now, can I benefit from it, or is it too late? 7 months ago I developed IBS. I'm seeking answers before I reach the Philippines next week to start my “2nd life”. Leaving the USA was my first priority.

Sorry that you're brainwashed by the blue zones. The blues zones eat a lot of meat and some fish. An okinawan doctor on youtube admitted that Okinawans eat all parts of the pig head to tail. They live longer than mainland Japan because meat has so many nutrients. Sardinians eat a lot of meat and cheese. A nutritionist named Mary Ruddick went to Ikaria greece. She went to a restaurant there and everything on the menu was Meat and some fish.

Please more info on the sourdough bread as gluten free please and thank you! Oh! What brand do you use please. I’m new to gluten free stuff.☺️
Can you explain a bit about why you don’t buy cheap olive oil? Is it less beneficial from a health perspective?
This looks great!
The biggest mistake people make when dieting is not prepping accordingly. I think a good business model would find the link between these two, and make it easier for people to stick to thier diet.
Hi! Are you using frozen cod or salted cod ?
@@ClaudiaRodrigues-Wanderlust it’s actually fresh cod! I live in Rhode Island, so we luckily have fresh cod at our local grocery store. Pre-frozen works as well, but you will want to completely thaw it and get as much moisture out as possible before baking.

I have a question how many protien and omega should I consume within the week. Because I’m trying to loose weight as well
@@richbev8068 well as far as omega 3’s go, they are an essential nutrient and are unlikely to contribute to weight gain if taken in the recommended amounts. You will need to discuss with your doctor how much protein and omega 3 is a good amount for you, because everyone’s weight, height, and metabolic factors are different :)
Blue zone, 😂😂😂, you mean a parcel of land not sprayed heavy with pesticides or bioengineered foods.

I would love to see the report or lab test or whatever it was that said sourdough bread has less gluten than gluten free bread. As a celiac, I have never heard that, and know that I cannot eat sourdough bread made with wheat, rye or barley. I can eat gluten free bread though, so would love to see the data.

To specify, this is sourdough bread made a certain way with a great starter. If you have celiacs you shouldn’t try it unless you discuss it with your doctor :)
The Journal of Nutrient entitled Beneficial Effects of Dietary Polyphenols on Gut Microbiota and Strategies to Improve Delivery Efficiency did similar study found same but says different about proteins and fats. Which is right the study you are referencing from or the Journal I read?

If you have a gluten free bakery near you, most have a sourdough loaf. They tend to run abut $20 a loaf though. I have been trying to make a gluten free sourdough starter and haven’t managed it yet. Hoping to make my own one day!
@@bethmeredith2425 hey Beth! If you are gluten free you should discuss it with your doctor. The sourdough breads made in bulk in the stores will likely have too much gluten for you. When I made mine I added, actual walnuts to the Greek yogurt mix (because I don’t have peanuts) a layer of chocolate on the bottom, caramel or madjool dates, the yogurt peanut butter mixture, another sprinkle of nuts, caramel or dates, then the second layer of chocolate

Can I replace the zucchini with cucumber?
Hmm good question! I would imagine if you let it marinate for only a few minutes in lemon juice it would be delicious! More than that and it may get slimy and lose its crunch. The raw zucchini has a crunch to it that I really enjoy, but let me know if you try the cucumber!
One of my fav snacks is cucumber with con somè and lemon it’s delicious!
I HIGHLY prefer oil and vinegar on my chopped salads and sandwiches over mayo

Those are green onions. Scallions have a bulb at the root end.
It’s my understanding that (from Bon appetite magazine) “the only difference is how they're chosen to be labeled at the store. Spring onions, on the other hand, are a different thing. The bulb of a spring onion is much larger, compared to the small, not-so-bulbous scallion.”
If you dont have a small enough container to keep them from falling over, scrunch up a paper towel to hold them in place

Hey! It’s Jessica’s Brick Oven Bakery brand! But honestly, if you can get it from a local bakery that uses a really good starter, that’s even better :)
I do a similar one. I add some chocolate protein powder, powdered peanut butter, cacao powder, vanilla extract and occasionally I will add a little bit of sugar-free butterscotch instant pudding mix. That gives it a butterfinger flavor, but the chocolate peanut butter is really great on its own.
That sounds so good! I definitely want to make a chocolate peanut butter one at some point. Powdered peanut butter is a great idea!

For the chocolate try using coconut oil(any oil works really) instead of milk. You could also try freezing it until the chocolate is a little bit harder, I don’t think the chocolate shell was chilled enough
