Christmas in your glass! || NEW Irish Whiskey from Killowen!
This is a very special whiskey from the Killowen Distillery, which they released as an airport exclusive just before Christmas.
Luckily, I have a friend who was travelling through the airport, so I was able to do a bottle share and get my hands on this really rare whiskey!
It's a Single Pot Still Irish whiskey from the Killowen Distillery, coming in at 52% ABV, with natural colour and no chill filtration. It's also got an interesting mashbill of about 57% Malted Barley, about 7% Malted Marris Otter Barley, 32% Unmalted Barley, and about 2% each of Wheat and Oat.
It spent 4 years and 2 months in an ex-bourbon cask, before spending 3 months in an ex-apricot brandy cask and then another 3 months in an ex-PX sherry cask. So while this whiskey is still pretty young at 4 years and 8 months, it's relatively old by Killowen standards.
Now, before I get on on to the tasting notes, I'm going to mention that I found this whiskey to be a bit better when I added a few drops of water, so these tasting notes are with a bit of water added. If you want to see the casck strength tasting notes, you'll need to watch the video!
Killowen Christmas in Your Glass Tasting notes
Nose
Lots of fruits, think apricot and stone fruit, but also some crisp red apple, citrus peel, fresh ginger and syrupy dried raisins. The sweetness continues with caramel, brown sugar, and vanilla beans with a little bit of oak spice rounding it out
Palate
The palate is rich, but soft, with more of the same fruits from the nose, but with a stronger caramel and vanilla note and more oak spice
Finish
The finish is medium-short, with vanilla, oak, apricot and orange peel to be the only notes lingering on after a breath
Overall, like I said, I found this whiskey to be improved with a few drops of water, bringing it down to about 45%ABV, but I do appreciate that the Barántúil range is always at cask strength, which allows consumers to decide to drink their whiskey the way they want to!

Valid point with younger whisky at cask strength, it is not always the best thing, especially with a fruiter led dram. Cheers to a great 2025 mate.

Nice one Matt, these are some good pairings. Cheese is big for me but since you're not a fan I also like to have pickled stuff (okra, gherkins or plums), dried fruits (figs, apricot, raisins, mulberries), raw or smoked fish. Honorable mention for me as well that I absolutely love having a cold one next to my whisky. Depending on the whisky I could go for some IPA s, lagers or stouts. Cheers my friend!
Ah! Pickles would definitely be a great contrast! And I agree with you on the beers. In the Irish Whiskey Society, we did a whiskey and beer pairing evening and it was really well received!
It was interesting what you said about adding water to the Killowen. I got a bottle over Christmas of the Barántúil Single Pot Still Amontillado and wasn't blown away by it. I only had one dram so I will be trying some water next time. Looking foward to trying it again.
Definitely try it with a few drops of water to see if it improves for your palate. Maybe it's the youth, the high ABV, the fact the current releases are some of the first stuff they distilled (when they were learning the quirks of their stills), or a combination of the three, but I've found their releases to often be improved with a few drops of water

Aren't those gingerbread cookies you are thinking about "Speculoos"? I'm going to have to add this whiskey to my endless list of whiskeys to try.
I was thinking of those really crisp ginger thins, like the ones Ikea sell. A bit spicier and crunchier than speculoos. And I hope you can try it!

Two Irish whiskies I had recently, no longer easy to find, were the Clonakilty and Knappogue Castle. Both very nice!

When I worked in event catering, pairing was my focus. Another great pairing with whiskey is dried fruit, especially figs and dates. Good stuff, Matt!
Oh yes Vino! Dried fruits can work so well as a pairing!
Grilled meats, smoked meats, dried fruit, sweet and spiced nuts.

Well said. Peat can add to the experience. For fish, I'll usually go with the Balvenie Double Wood due to its lemon characters. For steak, I'll go with a bourbon. That's about as in depth as I get lol. Cheers to ya.

Ever ruined a glass?
With the smoker? No. I have cracked a few glasses when stirring cocktails in them rather than the mixing glass, but I tend not to overly smoke the cocktails, so staining isn't a problem
Depending on the day I either get a fruit custard with some nuts from this or strawberry ice cream. The finish is slightly bitter but still pleasant

I just tried this in the last few months. Im pretty new to Irish whisky and I have been trying quit a few lately. This was one that really stood out to me. I wasn't expecting much at the price point, but it definitely surprised me. I enjoy it quite a but and I am on my second bottle. Cheers from Texas.

it's ok, still not my taste but way better than Glendalough yet still best whiskey ever for me is Roe&Co and best single malt is Auchentochan 12yo (i know it's scotch, haven't found my irish single yet)
There are more and more Irish single malts coming onto the market these days, but a lot of them are still young, or if they have an age statement, they are often down at 40% (like most of Bushmills!) hopefully you find the winner in 2025!

I mean, there are 6 whiskeys there but only 1 is easily accessible to anyone living outside Dublin
Yeah, but with thr bushmills I just wanted to show that even though a whiskey might not be your favourite, it can still be enjoyable. As for the others, I ordered my Full Irish from the Blackwater distillery in wexford, and it's still available on their site, the Glenallachies are scotches so can be hard to find anywhere post-brexit, but a few stores in the EU (like Dramtime) have them in stock and ship to Ireland. And as for the Pillars of Creation, I ordered mine online from Two Stacks in Newry, but it sold out on day one of the launch. Hope that helps you find them!

Mazel Tov on your good news! The Full Irish sounds like a good option, though I cannot find it available in the US. I did find a Teeling Single Malt Red Wine Cask Strength available - any thoughts on this? The local mega-store where I found availability for the Teeling Single Malt Red Wine Cask Strength provides no insight as there are three reviews: one 5-star, one 3-star, and one 1-star. Hmmm, that's an interesting one as (as far as I know) those Teeling cask strength releases are single casks, so they will vary from release to release. I've had a pot still one which was very nice and had some really nice wine influence, but unfortunately I can't guarantee the quality of the malt, especially as the reviews seem a bit mixed! In any case, happy new year, and here's to another year of hopefully great whiskeys!
Unfortunately for those of us in the US, we have to order from the retail shops like Irishmalts or James Fox Dublin or find them on Irish Whiskey Auctions. Not sure what megastore you are close to. Binny’s and Total Wine have decent selection depending on your location. Party Source in Kentucky has really good selection.

I had Bushmills 14, Redbreast Missouri Oak, Clonakilty Virgin Oak SPS (Stories & Sips), Killowen Legendary, JJ Corry Vintage Select 21 year Single Malt and Dunville’s 23 year PC for Friend at Hand
I struggle to see beyond Ledaig Sinclair Series Rioja cask. Value for money & incredible flavour!

Crossing Currents Ingredients 2 Oz Irish whiskey, 12-year 3/4 Oz Bianco vermouth 1 tsp Coconut liqueur 1 each Angostura bitters, dash 1 each Lemon peel, trimmed Stir all ingredients except lemon peel with ice and strain into a cocktail glass. Express lemon peel and add to glass. Another one of my favorites 2 Oz whiskey 1 /2 Oz vanilla liqueur 1 /2 tsp ginger, fresh, grated 1 /3 Oz maple syrup 2-3 dashes orange bitters 1 orange peel, 1-inch round piece Combine whiskey, vanilla liqueur, ginger and maple syrup in shaker. Add ice and shake well. Strain through a tea strainer into a glass. Dash bitters on top of the cocktail. Float orange disc on top of your drink and serve.
Those both sound great, but the second one is really interesting, almost like a sweet Penicillin. What do you call it?

I enjoyed both your Irish Blonde and Orange Whiskey Sour - absolutely adore orange bitters. The best new cocktail I tried in 2024 was from a December 2023 Robb Report recipe called a "Casino" - an old-time libation from 1909, which was revived and reprinted in said magazine. An Old Tom gin-based drink, featuring, you guessed it: orange bitters. A perfect summer's drink. Nonetheless, the best drink I ever enjoyed was at the Killarney Park Hotel, where the bartender at the time (well over ten years ago) made a Cosmopolitan using orange juice in place of the standard lime juice - truly amazing. Hope you, your friends and family had a great time and are able to make the most of all the holidays at the end of the year. And both of those cocktails sounds great, the Jack Ryan whiskey brand put out a whiskey this year called the Symphony, (aged in old Tom gin and orange bitters casks) I wonder how it might work as a variant in the Casino cocktail... I think I'll have to try it!

tried it now for the first time and compared to white label it is like another dimension when it comes to taste,in a good side and try it with irish cream coffee also.
Oh, I should try it in an Irish (American) coffee too! And yeah, it's another level compared to the 'regular' version
